Salmon Rice Noodle Bowl Recipe
Ingredients:
For the Rice Noodle Bowl:
8 ounces rice noodles (vermicelli or pad Thai noodles work well)
1 cup dino kale, chopped
1 cup cherry tomatoes, halved
1/2 cup cucumber, thinly sliced
1/4 cup fresh mint leaves, torn
2 scallions, thinly sliced
1/4 cup toasted almonds, chopped
1 can (6 ounces) tinned salmon, drained and flaked
For the Tahini Dressing:
1/4 cup tahini
2 tablespoons lemon juice
2 tablespoons water
1 tablespoon soy sauce (or tamari for gluten-free)
1 tablespoon maple syrup or honey
1 garlic clove, minced
Salt and pepper to taste
Instructions:
Cook the rice noodles according to the package instructions. Once cooked, drain and rinse the noodles under cold water. Set aside.
While the rice noodles are cooking, prepare the tahini dressing. In a mixing bowl, whisk together tahini, lemon juice, water, soy sauce, maple syrup or honey, minced garlic, salt, and pepper until smooth and well combined. Adjust the seasoning to your taste preferences.
In a large mixing bowl, combine the cooked rice noodles, chopped dino kale, cherry tomatoes, cucumber slices, torn mint leaves, sliced scallions, and flaked tinned salmon.
Pour the tahini dressing over the noodle and vegetable mixture and toss everything together until all the ingredients are well coated with the dressing.
Serve the Rice Noodle Bowl in individual bowls, topped with chopped toasted almonds for added crunch and nutty flavor.
