The reason Joseph didn’t use Hamon to manipulate the liquid in the glass is becuase Hamon is super flashy and visible. Even back in Part 2, Smokey said when he first met Joseph that he had a bright glow around him, D’arby would have easily seen Joseph using Hamon and that would’ve instantly forfeited him, so he went for a more discreet method of cheating.

D'Arby was not scared of Jotaro. He almost died of fear, because if he lost, he would have to reveal the secret of DIO's stand and that thought terrified him. It was DIO that was causing D'Arby to panic.

Not to mention, if he even slightly cottoned on to the similarities between Star Platinum and The World, the possibility Jotaro swapped the cards became all the more real. After all, it was grabbing stuff without him noticing and The World can pause time.

NWARMALEMENT BLACK not everything on any wiki is 100% accurate. Many things are from yugioh are inspired from jojo, but I doubt this fight was the main influence for the creation of yugioh.
Fun fact: Jotaro canonically thinks he has a bad poker face. Also it's been speculated by some fans that Jotaro doesn't actually know how to play Poker and was just bs-ing off the bare minimum knowledge throughout this entire episode, which is one of my personal favorite headcanons

Don't sleep on D'arby, like Jotaro said... he is definetly the most dangerous stand user they have encountered so far. And the amazing part about it it's that you can't even get mad at him, because even thou he cheated multiple, when it comes to gambling you can do anything as long as you don't get caught. He won against Polnareff and Joseph simply by outsmarting them.

I think it's easy to assume that the bodies that died from Darby have already decomposed and are gone, the souls were just able to pass onto the afterlife instead of being trapped in a book

When the narrator says a character has "retired," it means they've been defeated so badly, they can't fight anymore. Sometimes it's because their bodies are too broken to physically fight, other times it's because of a psychological change. Remember that Stands are powered by the user's fighting spirit. In D'arby's case, it was partly Jotaro's bluff, and partly the consequences of standing against Dio that D'arby feared. That's why he couldn't Call. Later, when D'arby realized he had been bluffed, it proved he wasn't the greatest Gambler in the world after all. This belief had been what powered his Stand, so his Stand basically stopped working. What happens to all those other released souls depends on how non-stand users would interpret D'arby's soulless victims. If they seem comatose, they might be on life support in hospitals until they die of old age or other medical complications of the coma. If they were already embalmed, created, etc, the souls would pass on to the afterlife normally once released.

What's wild about this fight is that the whole show would be over if D'Arby said one word, DIO would've won. But Jotaro bluffed so hard to the point where he was afraid and couldn't say it.

One of the creepiest things in this part just imagining what was going through Steven Moore's families minds. They lost this guy and they risked their lives to save him and also lost their entire lives to becoming a chip. If you lost a close family member (even if they might not be the best person) many people would do almost anything to try to save them. When you lose someone there's many stages of grief. Such as denial, sadness, anger, bargaining, etc. Imagine being in such a traumatic phase and this scumbag taking advantage of that.

So fun fact, Jotaro was a nervous wreck. Star Platinum was partially out of control, that's why it was able to break its range limit and was bringing him stuff like it was doing while he was in jail at the beguining of part 3 season 1.

Mind you that the jobros have been wandering for a while now. They've met other shady and suspicious people who didn't turn out to be Stand users, so at this point they have the system of "If they try anything with a stand, Jotaro can probably stop it since he's faster. Keep him in Star Platinum range of anyone suspicious, but give them the benefit of the doubt". That's why Avdol speaks to Jotaro when noting that D'arby could be a stand user, since Jotaro's the only one with a Perception-based Stand. Whereas other people have the ability to sense Stand activity somewhat, Jotaro has super vision among other things so he is the best at making sure if someone even has a hint of being a Stand user. Up to this point, he's also the one who has been identifying the most stand users from the crowd before they reveal themselves, like with Dark Blue Moon and Justice. They continue to rely on him for this purpose down the line.

I always thought the steam rising from Abdul's body was because of his stand being Magicians Red. Like it's a fire stand, and since Abdul is on the verge of death, the steam is like his body "cooling" . But as for the souls in the book, the bodies would have decayed. Joseph and Polnareff were released within minutes of losing their souls, hence no time for their bodies to decay.

I just love how good this fight is... Everything was so well set up and the tension is so NICE. SPOILER Also when rewatching the fight you just notice what genius araki is. So as Jotaro asked d'arby about Dio's stand he starts panicking because he actually know's Dio's stand ability and that revealing dio's stand ability means death, but he also sees how similar Star Platinum and ZA WARUDO actually are. Therefore he coudln't convince himself to call as there was a high possibilty that Star Platinum can stop time aswell and swap the cards with ease. This fight is just so GOOD and the egypt arc aswell so I can almost forget about how bad the first half of part 3 is ...

The reason that Joseph and Polnareff come back is because not much time had passed since they lost their souls. It would be similar to people who's hearts stop due to something like a heart attack being brought back by doctors, they are able to come back because not much time has passed. For those that died a while back their souls essentially just get to be free of D'arby's chips and they get to move on to the afterlife.
