Air Fryer - Red Pepper & Mozzarella Potatoes

This dish was inspired by the 'Pinch of Nom' recipe - Dirty Fries. Using the Salter XL Air Fryer I cut the potatoes into chunks and 'fried' them with peppers and onion then topped with mozzarella. Such a simple dish but adding different herbs and spices makes it very versatile and very yummy.
