Jack has been working really hard these last few weeks (more exams to come after half term!) so I thought it would be nice to make something a bit special that wasn't a cake. I found an interesting recipe online that appealed to me in that it looked fairly easy and it was - the filling was absolutely delicious. It had an american crust so not knowing what that was, I got a homemade shortcrust pastry recipe from bbc goodfood website (all links below) first time making and I was pleasantly surprised. It cost 10p less than the ready rolled version in Lidl but I probably could have got a lot more pie cases out of it, if I had rolled it a bit thinner - rookie mistake!
The finished pies cost 68p each, not bad at all budgetwise when something similar in a bakery may cost between £2 to £3 each.

Nearest equivalet for us is Digestive biscuits, so a biscuit crumb and butter base just like cheesecake idea. But you went further and made your own shortcrust pastry, which although more effort is better for a filling like that. Just a few tips for the pastry, it was hard to roll out because you had left in fridge 3 hours I thik you said. Always rest and chill the pastry for about 30 - 60 minutes. If notusing right away (and you can use day or do after or even freeze), just tak eout the fridge and leave for a little while till softer but still chilled and firmer than when you originally put in the fridge. This and also flattening the dough to a thinner disc, makes rolling out much easier. For making several pies, you could also instead of a disc, made rectangular shape and roll out in a rough rectangle from that. Making it easier to cut out all the 7 in one or 2 goes. The pastry then needs to chill and relax again because of the rolling out, and 'dock' the base with a fork, making holes all over th ebottom then put in the fridge for 30 minutes. This helps with them not puffing up as much, shrinking, and less 'soggy bottoms;. Then do your blind baking like you did. Fill the rice up right to the top of the pastry case to avoid more shrinkage too. And you can freeze that left-over pastry like you said. Just wrap in pape ror cling film and place in food bag and label it. Then you can add to it over time and have enough for one big pie. Never tried the condensed milk version myself, need to try that.

Yummy, I love lemon and make lemon tarts quite often. Chilling the pastry again for about 10 minutes before blind baking lets the pastry relax and they don't shrink as much. My late brother was a master baker, he taught me to brush the bottoms with egg white when they've finished blind baking and give them a couple of minutes in the residual heat. This forms a seal which stops very moist fillings making the bottoms soggy if you're not going to eat them all on the same day. Not much chance of that in your house with two hungry lads to feed!

It’s like a cracker we would have with cheese, that they crush up and mix with butter for the base, I think you could use digestive biscuits instead of those.

Google says the best alternative here for Graham crackers would be digestives. We do use crushed digestives for a cheesecake base so I bet that would be lovely in this recipe. I'm going to try that! I love anything lemon 😁. I suppose you could also pipe meringue, made from the leftover egg whites, on top and blast with a flame gun thing to brown the top?

Hi Kerry, the nearest thing we have over here to a Graham cracker is either a Digestive or Malted milk biscuits use them the same way you would use them for a cheese cake break them up mix with melted butter and line your cake tin with them, looks delicious 😋😋😋

Another yummy sweet treat. Tried making pasty once done it several times and still ended up looking like a patchwork quilt. I use condensed milk when making caramel shortbread. It's very sweet. Hope some of your produce from your allotment will soon feature Kerry.

Good girl kerry,well done for attempting your first shortcrust pastry infront of us all,BRAVE GIRL❤. Piercing the bottoms with a fork will help the pastry remain flat. Also try using ginger nut biscuits with melted butter to form a crust.🥰👍👏

Graham crackers , are a bit like a digestive biscuit , so that’s the English equivalent, we had them when we went to florida , well the daughter had s’mores round a bonfire , and they use these Graham crackers with the hot marshmallow inside , ohhhh there addictive but sickly lol . My hubby would love that pie

Oh these look fantastic Kerry must try them. However as everyone has mentioned digestive biscuits as a replacement for Graham crackers there is a distinct lack of own brand digestives in the shops . Mcvities are now £3.00 for a twin pack it's ridiculous and I am staging a one woman boycott lol. I have trawled every store locally and have been unable to find any at a fair price.

I read your comment earlier and whilst in lidl thought I'd check how much digestives (own brand) cost - 55p, they used to be 32p back before CoL crisis. Branded foods has always been expensive but now it's off the charts🥴

If you're saving those eggshells for your pot plants, don't wash them because the remnants of egg white provide valuable plant nutrients. Store them in a sandwich bag to keep the smells in, and scrunch them up to save space. Whole eggs that have gone bad can be used in the same way. No need to break them open, just put them in a bowl of water. - Good eggs sink, bad ones float. BTW: Where did you get your grabby things, Kerry, and have you got a link for them please?

I always make my own shortcrust, little tip, try using 3oz butter and 1 oz lard makes it very short. Also if your pastry had only been in the fridge for half an hour it would have rolled out easier. If it's in a few hours leave it a short while out of the fridge before you roll it😊

Plus when you get you pastry to a ball just use your hand to flatten it a bit, that forms a disc and when you remove it from the fridge because it is already thinner it will be a tad easier to roll! XxX
