Airfryer Meringues: not quite a Pavlova!

I decided to challenge myself and make a pavlova (I've never made one before!) I found a recipe online (link below) which had airfryer instructions, this could be for the Cosori, Ninja Dual or any brand - just adjust size to fit the basket.
It turned out quite expensive (but worth it!), once I worked out the cost breakdown and to be fair the raspberries and blueberries really made the cost jump but this could be mitigated if you grow your own raspberries or strawberries.

Pavlova Recipe & Method
Ingredients:
3 large eggs (whites only)
200g sugar (gran'd or caster)
1 tsp Lemon juice
1 tsp vanilla essence
For the topping:
230ml Dble Cream (whipped)
1 tsp Vanilla essence
1 tsp sugar
Berries (your choice) to decorate
Raspberries
Blueberries
10g Icing sugar (to decorate)
Method:
Put a pan of water on the hob and bring to boil. Seperate the egg whites. Place a bowl on top of the pan of boiling water (make sure the bottom of this bowl isn't touching the water) Pop the egg whites & the sugar into the bowl with lemon juice & vanilla essence and whisk until sugar has melted. Once it feels smooth, remove from the pan and continue to whisk (a balloon whisk using a machine produces best results for stiff peaks - I only achieved soft peaks)
Pipe the meringue mixture onto the parchment paper (a circle) & fill. Slowly pipe& build up the sides. Put on Bake 120c/248f for 20mins, then a further 70mins at 95c/203f. Leave to completely cool, (can wrap in cling film & leave til the next day) Put on a flat plate & spoon whipped cream into middle. Pile on the fruit, dust with icing sugar, Enjoy!

Kerry I’ve ever seen a meringue done that way before don’t they call it Italian, I do mine the easiest way sep,the whites whisk the whites until stiff peaks about 5mins then grad, add the caster sugar , if you use 4eggs add 4tbs of the sugar and whisk in 1tbsp of the sugar at the time whisk put all the meringue in the centre of your tray and make a well bake for about 2 hours the lowest temp. Until the. Mer. Is cooked when done put on a plate And fill with. Fresh fruit and whipped cream..delightful xx😊

Hi Kerry, I use my mums pavlova recipe and it’s great in the air fryer and I use the same whisk you have. I combine the egg whites, caster sugar, tsp cornflour, tsp vinegar and tsp vanilla extract. Whist for about 5 mins then just spoon onto baking parchment. Perfect every time x

Hi Kerry, the way to tell if you can use a pan on an induction hob, is to try a magnet, if it sticks you can use it. I bought an induction hob a couple of months ago, they're amazing! I've always used my hand whisk to whisk up the egg whites in a bowl and then just folded the sugar in gently by hand - it works fine that way and it quite quick. Yours may not have been what you expected but it looked absolutely delicious! xx

I have an induction hob fitted into my hob, it’s a four ring one, but that doesn’t make a noise at all. However it is flat. So easy to use and of course doesn’t get hot to the touch. Meringue looked ok in view you were bothered about it. I agree I would have maybe made it a. It stiffer, but it was fine. I always make mine with a hand whisk. I also always wipe around my bowl before st sting with lemon juice, as even if just a little piece of grease on the pot it will not whisk as it should. The bowl will look clean but it’s easy to have a bit of grease without knowing. Your cream and fruit made up for it hehe. I could just taste it , made my mouth water hehe. Try the lemon juice around your bowl first next time. Worth a try.

I love meringue and used to make them a lot. I've been looking to see if I could do them in the air fryer. I do the whisk up cold method, it's given me the confidence to try them. Yours looked amazing. They say the truth is in the pudding(or something like that😂) so long as you enjoyed it that's all that matters. I saw on another site that your pans for the induction hob need to be magnetic and put kitchen towel over the stove so not to scratch it. I have a stainless steel backing to my cooker, when I had it fitted they told me to use wet wipes. I actually use the lemon kitchen ones and they bring it up good. Thank you for another fantastic video, I'm catching up😊

@budgetcookinguk
@budgetcookinguk Жыл бұрын
I think it is, it is noisy (but similar to Airfryers) its quick to get to temp. An example of tonight. So I had leftover bolognese sauce and needed to cook pasta to go with it (for us fam of 4) cooked frozen bol sauce to temp in less than 10 mins let it bubble for a few more before putting a pan of water for pasta on the hob. Got to boiling point very quickly, cooked pasta and while draining, got sauce back up to temp before serving. Before, these would be on 2 separate gas rings and take a lot longer before getting to temp (75c) I'm not sponsored btw! Happy with set up despite noise 👍👍

If yiu use powdered sugar you don't have to melt it boiling it. Just beat the egg white + lemon juice to peaks. It shouldntake about 5 to 10 min even with hand beater then add the sugar, beat some more. It failed because it can't be beaten with sugar first, it doesn't reach peak but i bet it takes great anyway. if you want really fiem you can add 1 tea spoon of xanthan gun

Hi Kerry, I’ve never seen this method before, it’s absolutely ages since I’ve done a pavlova, my favourite dessert! I seem to remember I just whisked my egg whites in a bowl, not over a pan, it’s really important that it’s absolutely clean and no grease or oil residue present) but I think I added a teaspoon of cream of tartar, it seems to make the inside a little chewy? If you know what I mean? I only had the hand whisk as a wedding present 50 years ago 😮 still going! Just ! But it managed perfectly in quite a short time, I’m sure yours tasted great so alls well that ends well 👍 looking forward to your experiments with your ninga foodie, great video as usual love xx

I think whisking egg whites first ,then gradually adding the sugar slowly a tablespoon at a time , is why the meringue took so long to stiffen . But at least it tasted nice 😋

Oh Andrea that's a fab suggestion, I used to love lemon curd as a kid - not had it for years and have just googled it after reading your comment, egg whites can be frozen too until needed which I never knew. Top suggestion Andrea thank you, it would be great to try making a lemon meringue pie, last time I made that I was 14 for home economics at school!

Your induction hob is noisy, my Tefal one makes little makes noise compared to yours. It maybe the video that is making the noise seem louder than it is. Mine cost £44 back in 2016, you can possibly add £20 to that now, I think your model cost about £35 in 2016, maybe a bit more or less but I went for the tefal one as I was more confident with the named brand. I only use my Induction hob on manual for boiling rice and if I want sliced uncooked chicken breasts with honey or lemon chicken or a curry, it's as cheap as using the air fryer as I did a honey glazed chicken breast with rice and only used 6p of electric to cook the meal including boiling the rice, as I was having a cuppa so I filled the kettle with enough water to boil the rice in a pan as well and reused the pan to do the honey glazed chicken. Chicken breast strips cook in minutes in a bit of oil I took the strips out and added a teaspoon of margarine and a teaspoon and a half of flour to make a paste then then added two tablespoons of honey to the pan and a bit of water and stirred until the mixture became thick then tossed in the cooked chicken and heated it through, if the mixture is too thick add a bit more water, it's the same with lemon just substitute the honey for lemon.

That sounds both economical and delicious. Tis noisy but buying online, you don't know til it arrives and is being used. I don't really hear it now if that makes sense, and it cooks soooo much faster than my gas rings

Well i suppose you think it looks like a "Dogs Dinner" but so does Eton mess, which is really what you were aiming for if truth be know!!! so don't be too disappointed, best made plans don't always go as expected, unless you practice a lot, then it takes the excitement out of the results, i know, i make mistakes all the time!!
