Thank you very much Patsy for your recipe, the *scones were light and almost fluffy with a cake like consistency inside. The boys especially wolfed them down
I've only just realised Patsy that you call scones biscuits (US) and your cookies we call biscuits!😄 so I was making biscuits that were really scones lol (recipe below & pinned in the comments)

Recipe/Method:
Ingredients:
250g/2 Cups Self Raising Flour
113g/4oz Marg/Butter
453g/16oz Soured Cream
(I only had 300ml tub)
100g Granulated Sugar
(I added sugar)
Method:
Add marg/butter to flour and pinch
until crumbly - add sour cream and
mix until a sticky dough is formed
Place on a floured surface and knead
until workable
Form scone shapes with floured hands
and place into AF (oil crisper plates or
add baking parchment)
Bake at 210c/400f 8 mins, turn & bake
for further 3 mins (adjust times if needed
depending on AF used)
Leave to cool...
Enjoy with a nice cup of tea!
