How in the world do you manage to eat that HUGE salad in 30 minutes??? That's about the size I make and it seems like it takes me forever to finish. Thanks for sharing.😃

I had no choice. It wasn't pretty but I did it. It was a huge amount of food but so good.

You sound like a wonderful teacher. Your support of your students shines through in these lunchtime videos. I hope the students and parents appreciate your contributions. Teachers do not make nearly enough money for what they do, but trust me, your students will remember you throughout their lives. I still remember so many of them and am still grateful for the lessons they taught me. Teach on Joey!

Thank you for this video - packed with ideas. I really like chickpea salad sandwiches, and have a version most times I need a portable lunch, works well in a pitta or a wrap too, or wrapped in giant lettuce leaves. I can't believe another school year is ending, you have crammed a lot into this year - and the students have done so well, they are lucky to have you as their teacher. My teaching days were very limited, but having a teacher for a parent - I don't think my mother ever felt that she'd done 'everything', there was always some frustration, you just do what you can - and you go beyond Joey! Lexx is growing up fast, for my daughter starting to drive was a huge thing - she became very independent. She also stayed home after graduation, and studied locally, having a car meant she was very flexible and could concentrate on things other than 'who's going to take me there'. Hope you managed to eat that giant salad before break was over! Sending hugs and best wishes for a well deserved rest x🌴

I meal prep your tvp beet burgers and tvp brocolli potato bake and cashew cheese sauce every weekend. They are my go to lunches. I also recently discovered the channel MrsSlimonPlants and she has alot of great ideas on high protein, lower calorie meal ideas, although not necessarily lunch portable. Her seitan buns are great. Looking forward to warmer weather when a cold salad sounds better for lunch....it still feels like March sometimes here in Seattle and I crave warm food. But you are right, a fully loaded salad can be so satisfying.

I taught for a few years after college in the 90’s. My district paid us all year but it was really 9 mos pay spread out to 12 months. One of my colleagues and his wife (no kids) were both teachers and every summer they went from Missouri to Las Vegas and lived in a rented camper/RV and dealt cards at a casino to supplement their teacher income!

You can choose to get less money all year like you said but neither of us is paid for time we dont work.

I love hearing you talk about your teaching and the things you are doing! My daughter just got licensed as a teacher and is looking for a job for next year. I just love the look of your meals! My daughter is a school teacher and she gets paid year round for her 9 months of work. I assumed all schools gave the option to spread your pay throughout the year. I guess you just have to plan accordingly. Your lunches look great. Congrats to you and your students!

She is not getting paid for the summer, she is getting less money each paycheck so she gets some money when she is not on contract. She does not get paid for the summer.

All of those lunches look amazing! I started a similar journey as you last year. I went from the starch solution to higher protein, even used the same Earth Chimp protein powder 😂. I've noticed a big difference in my body composition. I didn't really have more than a few lbs to lose, so I haven't had a scale change, but the muscle definition is definitely coming in. I've been eating plant based for over a decade and working out, but the higher protein is what is finally changing my shape. My son is graduating HS this year and will also be in Atlanta for Nationals. 🎉

You get paid for the summer, or do you get less money each paycheck so you get money during the summer too. I don't get paid for the summer and I would find it hard to believe that you do also.

Hi gloria. Teachers are never paid for the summer break. In some states, including AZ, you can elect to get paid over the summer by having them take you salary and breaking it up into 26 paychecks all year long. This way you always have a paycheck every week. But I would rather get paid when I earn the money and not have the school keeping it from me. But either way, we are only paid for the contract time and of course not for the summer break.

I have never used any protein products. What brand of TVP do you use? Also you mentioned peanut butter protein. What brand is it. What is difference between tvp snd pea protein. I need to lose some fat but mainly add some muscle. I dm female and 76. I have eaten wfpb for 6 years following Chef AJ. I need muscle. I really enjoy your videos. Joey, are you full enough? I am having trouble with switching from strict starch solution, to eating more protein and keeping my calories low. I feel nit as satisfied after eating, not as full. Any suggestions?

I am eating enough for sure, but I make sure to get a lot of food for my calories. I do have to supplement that with protein shakes once or twice a day for sure.
