Her only unique skins are her Ach-To skin and Her Jedi Training skin. “Jedi” is just the default with a different hairstyle without that brown bag that she has in the default skin. The “resilient” skin is just “Jedi” with a hood and her yellow saber skin is just Jedi with a yellow saber

I agree with your #1. When I play as Rey, the Rey Skywalker skin is my go-to. Even in co-op, I extinguish the saber as soon as I don't need it just so I can activate it and listen to the ignition sound again. It's that good.
