Simple food is beyond time. Beef stew with aromatic gravy is a favorite one. Lumps of meat, braised in a sauce with veggies and spices, come out soft, tender and unrepeatably tasty. And mashed potato, pasta or rice will make your meal perfect.
Ingredients:
• boneless beef - 1 kg
• onion - 150 g
• carrot - 150 g
• garlic - 4 cloves
• tomato paste - 2 tbsp
• butter - 40 g
• vegetable oil - 2 tbsp
• all-purpose flour - 2 tbsp
• salt - 1 tsp
• ground black pepper - ½ tsp
• bay leaves - 2
• sweet paprika - 1 tsp
• ground coriander - 1 tsp
• boiling water - 800 ml
• parsley - 10 g
• scallion - 10 g
You will need:
• 2 pans
• bowl
• carving board
Preparation:
1. Cut the beef into small pieces.
2. Heat a pan with the vegetable oil and fry the meat over high heat for 5 minutes.
3. Add the chopped onion and keep frying over medium heat for 2 minutes.
4. Add the finely diced carrot and minced garlic, stir and fry over medium heat for another 3 minutes.
5. Add the salt, ground black pepper, sweet paprika, ground coriander and bay leaves and stir.
6. Then add the tomato paste and 600 ml of hot water, stir and bring to a boil.
7. Cover with a lid and braise over low heat for an hour.
8. In a heated pan fry the flour, stirring constantly, for 2-3 minutes, it has to become lightly yellow.
9. Add the butter and stir with the flour, add gradually 200 ml of water and, stirring, melt the flour. Cook for 2-3 minutes over low heat stirring constantly until thick.
10. In an hour taste the meat - if it is soft, add the prepared sauce of flour and butter and stir well, braise for another 2-3 minutes over low heat until the gravy is thick.
11. Sprinkle the braised beef with chopped parsley, scallion and serve to the table with potato puree, pasta or rice.
