Eating large amounts of raw spinach can increase the risk of kidney stones in some people because of the high oxalates so might want to cook most the spinach you eat.

Thanks so much! This type of video is really helpful to me as a novice working to adopt a vegan lifestyle. I hear endless blather from skeptics that I can't get enough protein without animal sources. This is great ammunition to illustrate the power of vegetables! I'd love to see more basic videos like this, since they give me great cooking and meal planning tools.

I’ve subscribed to your channel and I just have to say that you two are just too cute for words! I’ve tried some of your other recipes and, being an ole Creole gal who loves flavor, I find that you guys really know your stuff! I’m a former restaurant owner and I really had to know how to play with my spices and herbs. Keep up the good work! Question though…do you guys have a cookbook out yet? I’m also whole food, plant based.

Wow, thanks so much for the kind words! We do not have a cookbook as of yet but we do plant to someday!

Even as a child, brussel sprouts were my favorite! (I'm very much looking forward to a video on them) All the neighborhood parents would ask my mom how she got all her kids to eat their veggies, and her response was always something along the lines of "I couldn't stop them if I tried."

I got into the habit of eating Brussel Sprouts in the company cafeteria, where they did a great job roasting them. I sometimes put the frozen ones directly into soups. I had been prejudiced against them for decades after watching Jerry Mather's character refuse to eat them back in the day, in a episode of 'Leave it to Beaver'. Those canned Brussel Sprouts back in the day were really icky...

Oh, I can only imagine what canned brussels sprouts must be like, and I won't be trying them anytime soon!

I don't eat a lot of cauliflower either, but I have started putting it in my morning oats along with zucchini, carrots, and some kind of berries. You can't taste the zucchini or cauliflower, but it helps me get more fiber.

For me my favorite is Cabbage - I put it in everything. Have you all tried Broccoli sprouts? They are fantastic and easy to grow. I eat a lot of raw cauliflower and use riced cauliflower a lot in cooking as a substitute. The other thing I eat a lot of raw is red bell pepper strips (I often have a supper of a bit of hummus and cauliflower, baby carrots, red bell pepper strips and an apple).

Zucchini grows like crazy in the garden too. So does spinach. The caterpillars love broccoli too. Be sure to eat the broccoli stems, peeled, and late in the season, the small buds make good eating. My friend grows shitake mushrooms in his garden. Yuou need a lot of oak stumps with fungus plugs to make a few shitakes. Never tried growing Brussel sprouts. I bet the caterpillars like them too.
