Nicole -- thanks for authenticating. I'm from Philly area and the backlash out-of-area cooks get from making cheesesteaks at home from Philadelphians is nuts. It is really all about the roll, should be really soft, bendable, melt in mouth. I'm an American wit (and lots of ketchup) -- also the board in the background "How you doin?" is so funny. (aside: If you come to Philly, don't fall for Pat's or Geno's -- there are better -- those places are tourists traps).

I'm a Philly suburb native myself. I agree that too many people leave the area and are OVERLY critical many times but I've seen a few terrible representations (one was steak tips on a hot dog bun) as well. I think those REALLY bad ones are talked about so much the good ones get overshadowed. That said, I only had a few outside the Philly-NY-DC region that used (1) a quality roll that I expected and (2) actually chipped their steak well (I usually expect it to be lunch meat thin). Otherwise I think most places do just fine outside Philly.

I've never had an authentic philly cheese steak, but I've had our New England regional variation which is basically just shaved steak with peppers, mushrooms and onions and American cheese.

I make these at home and add bell pepper, jalapeño slices and mushrooms with provolone and we add Mayo to the bun… so damn good! 😋

I watched two other videos before watching this one. I went to the store and got two pounds of Rib Eyes. I decided to incorporate a green pepper. I watched a cowboy who says the cheese wizs is awful and he created his own and did a blind test, and his recipe won! Both videos had butter on the hoodies and then at the end, mayo. Of course, they included provolone and onions. I will make this tonight!

Just came across your Phillipy cheese steak sandwich here in Australia and was very excited to see the pictures of Pat's and Geno's. My husband is mexican and his nickname is Geno, and my son bought him the Geno' s (Heno in spanish) picture for christmas some years ago. Didn't know they made these sandwiches. Thanks sooo much. Make the perfect old fashion way of using pizza dough filling half with fried steak onions peppers and provolone cheese on one half of dough folding the other half over it seal it then bake it. Some people refer to it as a calzone but in the 1970's it had a different name . When I worked in a greek pizza place it was called a steak stromboli. It's been so long since I had one I cant remember if it had pizza sauce in it.
