Hey Tom, can you please where you set the damper in the bottom of the Yoder YS640s? I will be receiving my smoker soon and would be interested in some insight regarding the damper. Love watching your cooks, they are always inspiring. Cheers from northern Canada 😁😎

The baffle was originally put in the design of the smoker to help with airflow because the cookers only had one fan. Now they have 2 fans so it is not needed as much. For most cooks, Yoder recommends pushing it in about a third of the way. This will keep the smoker fairly even all around. You can push it all the way over to the firebox to do zone cooking. This would make the heat more intense on the side. You see people do this when direct grilling on the GrillGrates.

Maybe it would be a good idea to leave it whole as a roulade in the beginning and slice it when it's done. So maybe more juice remains inside and it's easier to handle. Just for thoughts.

So your running it with the whole diffuser removed and not just the firebox access panel?. I bought my Yoder from you guys but I’m always worried to use it for direct grilling. Afraid of all the oil and fats dripping into the fire box, thinking it will either be impossible to clean, damage the igniter rod, or cause a grease fire.

Looked a great way to use flank in the pinwheel. Just as an aside, to be people in the USA think the Keto "diet" is really healthy considering it is so unbalanced? It reminds me of Atkins put into the modern era. Any "diet" is a fad by nature. The best diet is one which is balanced and you exercise at least as much as your calorie intake. A balanced diet with a few cheats at the weekend, sorted.
