The butcher either refers to: A) the actual butcher we see at the meat market in the first game, where Amanda somehow lost control for a bit and couldn't back out, resurfacing her bad memories of not being in control there OR B) Larry Smith, who is in the credits of the one of the tapes in first game as the chief neurosurgical officer, which implies that part of Rebecca's brain was surgically removed to be put into Amanda. This is also supported by the fact that at the beginning of the demo we see the type of overhead lights that one would find in an operating room (we also end up in an operating room in the first game when Amanda kills wooly)

In the 1st game, the secret tape of the news said Rebecca needs time out of the spotlight and yet more Amanda the adventurer episodes were produced even though Rebecca wasn’t in Hameln, bc she needed time out of the spotlight. So my theory is, Rebecca found a tape of Amanda the adventurer, watched it, and got kidnapped by Amanda, and consumed Rebecca’s body for good, or Rebecca was killed by the monster version of Amanda. So the line “do you really think you can do that?…” *MEANS* that you can’t find Rebecca anymore, bc Amanda got to her first. but hey, “That’s just a theory!” 😉

Amanda and Rebecca are the same people. But you are right, Rebecca is dead. Hamelin seemed to be working with sketchy demonology and was experimenting with her, which would end up killing her. Her soul was trapped in the tapes at the mercy of the demon inside them.
