I live 10 mins from Windsor and Eton. Eton Mess was made when basically a pavlova got smashed by mistake at Eton College, and they served it up in bowls, with the name "Eton Mess!" It is yummy though!

oh, I really really love this recipe but I forgot how to do it exactly so thank you very much. I once had a friend who was a very good cook - the right word for cake- bakers? He showed me once how to make it and made some little changes about it, and if you don’t mind, I would just recommend try it just for once the way we did, it maybe matches your taste. The little changes were that we added between the layers and of course on the top a it all white chocolates cut into very small thin pieces, very very small pieces. I think it matches very good with the strawberries and the rest. And also we used one portion sour cream or crème fraîche and mixed it with 2 portions of whipped cream to make it more creamy, and between the layers always on top of the whipped cream and sour cream we added a bit of strawberry sauce which we further pressed very thoroughly to remove it from the little nuts ontop of the strawberries and other thick parts of the strawberries to make it as perfect as sauce can be, and by changing these little things I think its altogether changes the taste of it in a way that makes it a bit more delicious for me, and maybe others, too. And thank you for the tip with the orange peel and the orange liquor, I will try that next time I am serving eton mess… By the way, I have a question that you might be able to answer, and that’s where the name comes from, because I heard that this is written this way: eaten mess Instead of eton mess, Someone told me the story behind would be that someone has to serve a cake made of strawberries cream and typical round layers for cakes made of meringues? - I hope it is the right word - And that this person accidentally slipped and the cake fell onto the floor and broke into 1000 pieces and in despair because of the lack of another cake to replace, they put the pieces together filled it into glasses and served it as a different desert in a glass and to their surprise the people loved it. Do you know if the story can be true? Or does the name refer to something else? I would be very thankful for an answer. Greetings Mel

There's a good reason this is a classic summer dessert! Essentially it's a Pavlova served in a glass - but easier to make because the little meringue kisses are easier to handle than a large meringue. I absolutely love it.

I heard a story (I think Jamie Oliver told it in his "Naked Chef" series) that it was originally supposed to be Pavlova but that one of the students that was serving it dropped one and everything broke and smashed. They then just put it all in glasses and called it "Eton mess". I'll be very surprised if this story is true.

I followed your recipe and made this last weekend! It was such a hit for our friends! But the best part is, I had some left over macerated strawberries and meringue kisses so I decided to make this in milkshake form!!! So in my blender I put the strawberries, some meringue kisses, some heavy cream and some milk and blended them all together 😃 for the icing on the cake, I sprinkled some chia and flax seeds on top!!! Holy cow🤩🤩 It was sooooo satisfying to eat!! Comfort desert!!!!! ❤️❤️

While visiting a friend in England we went to Elton to watch her nephew play in a cricket match, which was so fun. She told me the Eaton mess was around when her grandfather was a student which would have been in the 1920’s so it’s older then 1920. Her mother thought late 1800’s. It’s my go to dessert when I visit

Hi John, love your channel, thanks. Elton Mess reputedly was born the day when a kitchen assistant dropped a meringue while passing it to the cook who was going to fill it . The cook didn’t have time to start again, as so just crumbed the meringue, and mixed it with strawberries and cream, then added some extra cream. The students really loved it and it was included on the menu thereafter. Yum tiddly-umptious 😊

Fun fact: Japan has its strawberry season in the winter, from December to April. Luckily here in Hong Kong we have both Japanese and American strawberries, so we can have Eton mess all year round.

I’m enjoying all videos from this channel and I just made another pumpkin cookie dough. His is the best and I’ve tried everyone else’s!!!! Thanks for your videos. It's been awhile since I made this. I remember in cooking school we had a ton of strawberries we had to use up and a ton of whipped cream so we ended up using the egg whites to make the meringues and we use the yolk to make lemon curd and had that along with it and some cubed up pound cake, we had it set up so everybody could assemble how they wanted it along with the fact that it was hot and I made everything else so I didn't want to assemble all the desserts. Oh and something fun I discovered one year I can't remember what base recipe unfortunately but I had made meringues and when I added flavoring I used strawberry candy oil and I added some citric acid to it, they ended up tasting like Starburst but having a softer texture I maybe could have baked them longer but I had to get to an appointment and we all like them if I remember correctly they had a little bit of a chew so we all kind of actually dug it
