I’m the newbie here I’m learning: I made a couple of mistakes. Not enough butter, the crust fell apart but I rescued it. Put it back in a cooking plate, took the loose crumbs packed it around the side, melted some butter and drizzled on top of the crust and put it back in the oven for about 20 minutes. It worked. Shared this with friends who raved over it! Thank you!

Instead of using the red food coloring you can use raspberry or wild berry tea bag.. I put it in the pan and it worked great!! 👌🏼

I literally JUST finished making this and its ABSOLUTELY GORGEOUS! It was actually much simpler to make, however one thing I reccomend is adding butter in the crust accordingly with the cracker dryness. Mine were dryer so I had to pour in more, and even that doesn't seem to be enough. Its still quite crumbly. However, it doesn't take away from the flavour 😋. The full taste test is yet to be had, I'm just waiting for the guests now. I'll update after ☺️... Update: I'm a crust person, & the crust was delicious! Especially together with the filling! The filling is on the tangier side and even after being in the fridge for a couple of hours, its tasted...warm, like a fall kinda vibe. The strawberry puree while delicious alone, did not seem to fit the overall flavor profile of the cheesecake. Next time cut down the sugar significantly, especially if already taste good, to amplify the gracefulness flow between the layers. This cake did end up being a beautiful rustic, warm, homey beauty 🥰

John -- glad you brought up using a ramakin with water versus using a water bath! For my past few cheesecakes, I've been filling a large cake pan with hot water and placing it into the oven under the cheesecase. I'm finding this method provides very comparible moisture compared to submerging the foil covered spring form pan directly into the water.

Hello John! I'm sure you know this trick to crush the graham crackers by hand without any mess, just toss them into a plastic bag, close allowing some air, and crush them using the rolling pin, either by rolling or hammering. If you're aggravated by something I'm sure hammering will be most satisfying... :) And btw, your recipes are wonderful, thank you for sharing.

Alton Brown via Good Eats: instead of putting the cheesecake in a water bath put a baking pan of water on the lower shelf of the oven while it preheating.... Making the oven into more of a sauna for the cheesecake. This also works well for things like pumpkin pie or any type of custard pie. It also prevents the surface of the cheesecake or pumpkin pie from drying out and reduces the amount of cracking that occurs. I've done this multiple times and it works really well. I don't ever water bath my cheesecake and they all turn out beautiful.

Hi John, this was my first trial at your recipes & cheesecake as well. Your no waterbath technique worked so well. I got compliments from my husband such as never had such fresh & delicious cheesecake. I don't eat eggs so I had replaced it with 2 tablespoons of whipped cream & 1 tablespoon of thick plain curd. I have very little baking experience, but was able to make this and it was phenomenal. The only comment i would add is dont be afraid to more melted butter to the crust to make it hold together. Following the recipe strictly, my crust was too dry to hold its shape. Regardless, it was really great!

I love strawberries so winner with me from the start. Going to try and source Graham Crackers. Here in the UK digestive biscuits seem to be the norm. It’s at the top of my ‘to do’ baking list.
