Caul fat - Wikipedia Caul fat, also known as lace fat, omentum, crépine or fat netting, is the thin membrane which surrounds the internal organs of some animals, such as cows, sheep, and pigs, also known as the greater omentum. It is used as a casing for sausages, roulades, pâtés, and various other meat dishes.

What was the point of the Saran Wrap and gloves while forming the patties when his other hand didn’t have a glove although he was touching the fat and he rubbed the outside of the Saran Wrap with the meat covered glove? Don’t get me wrong my family is okinawan but Japanese people are like any other people.

What kind of fat is it? How do they obtain that consistency? Do they use some special equipment or just get it from the butcher? Thanks

overcooked burgers. They would be rubbery, rather than succulent. You can add all the toppings you want to a burger, but if you don''t cook the meat properly it's not going to be a good burger
@regularguy4504

Agreed. The cooker didn't timed the patty properly. The flavour is ruined no matter how much sauce or topping to cover it up

It looks nice but burgers were cooked WAY too long. Bacon was also barely cooked at all. They look nice but I bet they don't taste very good. A burger that thin should be cooked both sides like a minute and a half 2 mins max. The wrapping in lace fat is interesting though. Not that it matters since you just cooked it off...

I always forget that in Asia they put like a million things on hamburgers. I always wonder how they even taste the beef through all of that. If you order a burger with 11 toppings on it what you want is a salad
@bucdan9242

It's likely not beef, but pork. Or a mixture of beef and pork. Beef is very expensive in Asia. But I know what you mean, Koreans and Japanese love sauce.

@@darkflex91While I'd love to claim the invention of the Hamburger for my home city, I guess putting grilled meat between buns or slices of bread is probably something people came up with more than once. Kinda like animals evolving into crab-like shapes over and over - it works, so it keeps coming up 😂 Although the Hamburger steak was really from Hamburg and sold in a world expo in New York (?), which popularised the modern Hamburger... at least according to Jim Block, a burger chain from... Hamburg 😅.
@brownhues
@brownhues 11 ай бұрын
The "Hamburg Steak" originated in Germany. Making it an easy to go lunch sandwich between bread was a US innovation, probably made by German immigrants, so the hamburger as we know it today is indeed an American invention.

The fat is called Caul in the UK, it's a membrane that covers the intestines of cows, and pigs and is a great way of keeping the burger super juicy as it cooks. Here it is used for a local dish whose name I won't repeat as it means something different in the US, it's also a name for a bundle of sticks. :D

@@patmo131The fat wrap is a silly gimmick for a burger where you have complete control of the fat content anyway. And the fat in the middle wasn’t rendering because the burgers were cupping on the skillet, so it’d be chewy.

Well done but a little confused to why the cull fat was needed. If the beef is between a 75/25 and a 80/20 blend, it would have plenty of flavor and be perfect for burgers. Maybe something to do with the rough grind. Anyone know what the seasoning in the big black can is? The used liberally on everything and I'm always on the lookout for a new seasoning.
