I talked to my dad about this stuff, since he was a kid around this time of government cheese and was from a low income household, apparently this shit was DELICIOUS!!! He said it's the best cheese he ever had, which makes sense considering it's cheese that was aged under a mountain, in a temperature controlled environment, for decades. People literally spend hundreds of dollars for fancy cheese like this and these old fuckers were getting it for nearly free

I can tell you as one of those “old fuckers” that gov’t cheese made literally the best grilled cheese sandwich I’ve ever had in my life. They offered them as an option in elementary school every day and I’m seriously PO’ed that I didn’t have more. Melty, gooey, buttery, cheesy perfection.

My neighbor was with a group that put together food boxes for those in need and we ended up getting the excess boxes. They all had blocks of that sweet, sweet government Cheddar. Still the best cheese.

This will be a bit of a tangent so I apologize for that but it's necessary context. So, what we call lactose intolerance, or an inability to tolerate/digest lactose, is in fact just a normal part of growing up. Lactose is a form of sugar (similar to glucose, fructose, and sucrose, starting to see a pattern?) that naturally occurs in mammal milk. This sugar is broken down by an enzyme called lactase which is naturally produced by the bodies of infants and children. However, one of the three changes a normal human undergoes during puberty is that they stop producing lactase. This is because milk is something you're technically only supposed to be drinking at an infant. You're not supposed to keep drinking it after to you stay solid food. Without the lactase enzyme to break down the lactose, your body can't metabolize it. Instead, the sugar is eaten by bacteria in your intestines which produce gas as a waste product. This is why eating dairy makes lactose intolerant people feel bloated and gassy. BUT (there's always a but) some humans possess a mutation called the lactase persistence mutation. This genetic mutation causes their body to continue producing the lactase enzyme into adulthood. The mutation is also far more common in higher latitudes than in equitorial climates. The theorized reason for this is that at higher latitudes is both easier to raise cattle, and easier to store milk and other dairy products, making it easier to incorporate them into one's diet. In equitorial climates, hot summers and mild winters mature it hard to store dairy products, and frequent droughts and heat waves make cattle and their milk an unreliable resource. Essentially, Europeans forced their bodies over generations of stubbornly continuing to consume delicious dairy products to mutate to accommodate this behavior. Meanwhile equitorial peoples like those of the middle east and northern and central Africa never had that opportunity. In some circles the widespread lactose intolerance among African-descended people is assumed to be a consequence of slavery and systemic oppression. The idea being that their ancestors were deprived of vital nutrients for so long that that evolved to get by without them. That's not the case. Lactose persistence is a wide spread genetic mutation that developed and spread over hundreds of successive generations, thousands of years. It's a process that started long before the height of Roman Empire, and possibly the before the founding of Rome itself. So the fact that Egypt, a country near the equator with a low rate of lactase persistence a major producer of milk is weird.

Looking back on this, do you ever wonder "I wonder what it tastes like." Since apparently, EVERYWHERE I've looked, people from the 80's and 90's and those related to then declared that it wad the best shit in the world. Like the best cheese, especially for grilled cheeses. I mean, it makes sense: it's decades old cheese sitting in a temperature-controlled bunker, made of blends of cheese, and some of those bunkers are in unused salt mines. So it's basically cold, salt-aged cheese. Like, I know how to make it myself, but this sounds like the best shit possible.
