I am definitely the type of person who likes to cook three times a day when I'm at home on the weekends BUT you're right, it should be seen as a luxury not an expectation because I know so many other people have WAY more obligations at home than I do. Leisure time to cook at home is a small, simple blessing that I have and can acknowledge and appreciate. Hope your weekend is lovely!

Amy, I am always impressed by how much you get done in your day, and how much you obviously care for your family. You're doing an amazing job, especially considering how much you film and how disruptive it must be to your day to be constantly carrying around a camera on a tripod. I haven't seen your hubby around for a while, so I hope he and the kids are all doing well.

Hi Amy! I have found that adding a Teaspoon of baking soda to the water when hard boiling eggs helps the shells to come off easier. I think the fresher the egg, the harder they are to peel. Best of luck next time! ❤

I’ll be gathering fragments too. Have a head of cabbage to use plus a bunch of garden veg in my freezer. A few bits and bobs of roasted veg need using plus I had a salad kit freeze in my refrigerator. So…it’s deconstructed cabbage rolls for me, stir fried rice noodles with frozen salad kit (it works in stir fries) and using up chicken broth with loads of garden veg from the freezer for soup. Tonight, it’s a melange of left over roasted veg and a left over potato with chili beans and shredded cheese (lactose free) for supper - thanks to you and the great idea. I love gathering and using things up! Yay! Bundt success! Have a wonderful weekend and enjoy that party!

I do the 5-5-5 method in the Instant Pot for boiled eggs. I could never get them to peel perfectly any other way, and they come out beautifully in the IP. Pressure cook them for 5 minutes, natural release for 5 minutes, then 5 minutes in an ice bath. It's the only way I will make them.

Sometimes I even let them sit longer, I then cover with cold water. I never peel my eggs til ready to eat , I put them in an egg carton marked hard boiled they stay fresh longer.

Here is how to make your cheesy potatoes dairy free: -Make your own cream of mushroom soup and chicken soup with oatmilk. Use a touch less flour when you make it, dairy free cheese has lots of starch in it. - dairy free sour cream - dairy free shredded cheese - use a daiya cheese packet or make a dairy free cheese sauce (stir in a touch of salsa if you don't have spicy daiya) I've made something similar before. It's totally manageable especially if they love it.

Good morning sweet sister Amy! I was having the same issue with hard boiled eggs. I was getting so frustrated I just wanted to throw them into the wall! Lol! I did not of course. I tried everything. Then someone told me to steam them! It worked! If you have a pot with a inside piece that has holes in it use that! I have not had any trouble with getting them out of the shells since! Try it. Have a wonderful weekend. Looking forward to Psalm Saturday! ❤

I'm from Australia. We don't tend to use pressure cookers (what people in the USA call "instapots") so much here. I've had one for quite a few years, and I've always been a little afraid of it (all that billowing steam and being scared of blowing the roof off ha ha!) However, I have since braved the steam clouds and realised the pressure cooker is the BEST thing for cooking eggs, chicken and so many other things. I have freshly laid chicken eggs, and find that a cup of water in the bottom of the pressure cooker, laying the eggs on a rack and pressure cooking for 4 minutes on high, waiting two minutes then releasing the steam, before ice water bathing works perfectly every time to shell hard boiled eggs. The only exception was when I travelled to the "lowlands" to visit my daughter (i.e. I live at 1,330 m elevation - 4,365 feet in U.S. speak). At the lower elevation, the eggs all cracked. I need to reconfigure that, with Dr Google's Help. :)

I use Ina Garen's (The Barefoot Contessa) method to make hard boiled eggs. Put your eggs in the sauce pan, cover with cold water and bring to a rolling boil and I boil them for about 1 min, then shut the heat off, cover the pat and set aside off the heat for 20 min (don't open the lid), then drain, run cold water over to cool and then fully cool in fride, then peel - I have yet to have a green/under or over cooked egg. They are not rubbery at all. I also use my box grater to shred them for egg salad, rather than chop, as it makes for a fluffier eggsalad, then as S/P, Dill, finely minced onion or chives if you prefer and I like Miracle Whip and just blend.

Good morning. When I was growing up we always made our frosting with shortening. No one liked coffee so we always used milk to be the wet ingredient. I'm excited for the weekend my niece is home from Kansas City for the last 3 days she leaves in the morning and I'm going to get to spend some time with her today I'm excited about that. We had several storms this week I'm hoping that you didn't get all the snow that was coming across the country. It's crazy that one week you can be out in your short sleeves, and then a couple days later you're wearing winter coats cuz you got feet of snow. I have found that farm fresh eggs I can get to peel for hard-boiled eggs if I bring the water to a boil, lower cold eggs into the water cook for 13 minutes, then get ice water and shock the eggs in the ice water at the end of the 13min. The temperature shocks are what make them easy to peel.
