Because offensive style users can't handle 4 arms of grevious. They can't attack to every arm and this causing hem to lose the fight (or lose their limbs) but defensive style works better in grevious because defensive style is just about focusing to the attacks of your enemy. All Dooku needed to do to overthrow Palpatine was this: Apologize to Ventress and tell her the real reason why he betrayed her. Tell her how he really felt and his plans in the future, which includss her. Maybe also try to re-recruit Savage Opress and treat him a bit kinder, and perhaps Maul too, although I doubt Maul would want to join, and may even warn Palpatine. Anyway, just with Ventress and Griveious on the ship would be enough. Palpatine is tied, Obi Wan and Anakin face Dooku. The plan is for Dooku to incapacitate Obi Wan do him and Anakin duel and Anakin has to win to rescue Palpatine. However, Dooku wont proceed with the plan, Dooku sees this as an opportunity to expose Palpatine as Sidious and either kill him, or make Sidious expose himself. So... when Obi Wan and Anakin arrive, Dooku meets them, and when the fight is about to start, Griveous and Ventress (and Opress if convinced) arrive, alongside some Griveous bodyguards. Dooku isnt leaving any marging for error, so he will attack both with everything. Palpatine will be furious but of course, he HAS to play ball. Anyway, Dooku focuses on incapacitating Obi Wan, but instead of knocking him out, he wants him to remain awake. The the pressure on Anakin will have him succumb as well. They both get captured and Ventress and Griveous will make sure they dont try anything. Dooku starts telling Obi Wan how he told him the Jedi are blind. And tells Anakin how he has been naive, groomed by Palpatine to the dark side. That the Sith Lord has been under the Jedi's noses all along. And its Palpatine. They dont believe it of course, and this is when Dooku puts his ace out. He explains how when a Sith kills another sith, a shift on the balance of the dark side occurs. Anyone who is force sensitive and close by will feel the shift. If Palpatine isnt the Sith Lord, when Dooku strikes him down, then nothing will happen. But if Palpatin is indeed Sidious, they WILL feel the power of Dooku grow as Sidious dies, and the balance of the dark side shift. Either that... or Palpatine will be forced to defend himself, exposing his true nature. Dooku is ready to execute Palpatine, when he sets himself free and force lightnings Dooku, but Dooku was prepared and blocked it. "Now you see, old friend? I was not lying to you" Dooku yells to Obi Wan, as he, Anakin and Ventress (and Opress if there) are in awe at the power they are feeling. Griveous and his bodyguards then will try to help Dooku but will get zapped, and Ventress is too much in shock. Dooku and Palpatine will duel, with Obi Wan still in shock and Anakin angry. He doesnt know he he is angry at the most, if at Dooku, or Palpatine. Dooku is better at dueling than Palpatine, but Palpatine's dark powers are overwhelming, and Dooku asks Ventrss to lend a hand. Together, as Master and Apprentice, they can take him down, but Anakin intervines as he is still confused. Dooku tells Obi Wan to send a message to the Jedi Counsil of what he is witnessing, just in case he doesnt win this battle. And Griveous tries to help but is essily dispatched hy force lightning. If Opress is there, its a bit easier for Dooku but Palpatine isnt no slouch, so its not like they are gonna beat him. Now whatever the outcome may be, Dooku succeded in his plan, Palpatine is exposed and now Dooku plans on defeat him and be the new Sith Lord, or get rid if him and rule the Separatists as he sees fit, without Palpatine pulling the strings. The Jedi will be more focused on hunting Sidous down, than hunting Dooku down, so it all works out on Dooku's side.

Count dooku kept grevious from anakin out of fear that grevious would absolutely shred through anakin, which makes sense seeing how grevious was able to learn someone's fighting style near instantly while also being able to call back on prior fights to use to adapt even faster mid-battle. Despite having no force sensitivity, grevious is an extremely skilled fighter. Even the writers admit that his death was convenient to the plot, he only lost due to not having the guidance of the force, and obi-wan only won by putting his entire focus and faith into the force.

He could've beaten Grievous if he chose to seek out Grievous and take him on, but he knew there was no point when Obi Wan was basically a perfect counter to Grievous. And in the end, if Anakin can't beat Grievous like you say, he will simply tap into the Dark Side and butcher Grievous.
