Started carnivore January 13, 2023. I weighed 340 pounds. Six days later I’m down to 318. I realize it’s a lot of water loss but losing 22 pounds in 6 days is amazing! I have 72 pounds to go. I know it’ll get harder as I go but I plan to stay on carnivore until I hit my target and then add a few things to my diet and continue the diet as a way of life. Amazing how fast my bloat disappeared and my energy level is rising rapidly. I’m a medical technologist and have opportunity to check labs often. In 6 days my A1C went from 6.2 to 5.4. Unbelievable!! "No one optimal diet for humans" = Absolutely true Anyone who says otherwise simply does not have enough experience working directly with people on the ground. When you work with hundreds or thousands of people, you quickly realise that the "best" diet just DOES NOT WORK for a bunch of people. Its just a reality. More appropriate is to base one's diet on a set of universal principles which appear to foster health and have the least deleterious effect Awesome job!
@tylermoore44292 жыл бұрын
But Paul says there _is_ one optimal diet: the animal-based diet that he currently recommends. If you disagree, and there isn't just one optimal diet, what is the possible range of optimal diets somewhere between eating air and rocks? What are the universal principles you speak of? What universal principles unify the carnivore diet and the vegan diet? What about all the people in the middle who have various intolerances and do not fit neatly in any camp?

I was gluten, sugar and dairy free for 3.5 years. The past 6 months I have had occasional gluten and seed oils to be social. Pizza, Beer, Taco, etc. I'm moving quickly towards 60 but I'm by far the best version ever. My ears would become clogged like in an airplane take off and landing, when I ate gluten, this would lead to almost brain fog, just uncomfortable feeling and struggle to follow conversations. My cognitive ability has improved significantly to the point of rewiring my brain. For the most part, I had untreated undiagnosed ADHD, which is ok, since initial treatment plans are medication. I did experiment and for me they were ineffective. I found diet to be the most effective along with functional movement and breathing. Now I'm never tried and never hungry. It has been hard for me to completely eliminate veggies, as some in my diet has kept me feeling balanced. It blew my mind that many vegetables have defense chemicals, that we have disregarded and can be harmful to us. I think once you realize how the food and health industry is not looking out for you, you realize that you need to start researching and thinking for yourself. Also fuck seed oils!! Been consuming this shit for years with my fam. Eliminated these last year and see huge improvement with my digestion and gut. @@rachelbrondel5858 Hi Rachel, I can help to best of my ability! What I used to eat: basically anything I wanted. I realized I was skinny because I was burning my fat and muscle with poor glucose control, A1C averaging 8-10 (so bad...). I ate a lot of carbs (rice, bread, pasta), processed bars, still ate my fruits and veggies, ate out alot. Constantly trying to gain weight... but no results. Had a lot of gastro issues, heartburn, acid reflux. Only for me to realize after requesting the test myself, that my pancreas was having troubling breaking down fats. This journey to find out what was wrong was the beginning of my journey. I was sick and tired of healthcare and doctors generalizing me and putting me on medication that have long term side effects. I finally ditched all the excess heartburn/acid reflux meds about 2 years ago. I was put on Creon (digestive enzyme) and solved alot of the digestive issues I was having. But things didn't seem 100% better, I was having hard time controlling my sugars when consuming processed foods and I started taking a new medication daily with every meal ( even though i am trying to ditch it completely). I currently still take this and not sure if there is a work around to ditching the digestive enzyme. What I have transitioned to over the past year and half: I have incorporated all unprocessed whole foods in my diet. Started with smaller portion of carbs (rice), more protein (65%), and the rest veggies. After coming upon Paul's page, I decided to cut out rice (use to be my main carb), now to potatoes (which I know isnt recommended), honey, and fruits. I had such a messed up gut with my old eating habits, I had really bad sugar cravings and fed into them. Constant brain fog and low energy. Once I switched to meat being 70-75 % of each of my meals and cut out processed carbs, wow I saw a huge difference in my sugar levels, physical, and mental health. I eat a lot of grass fed ground beef (90/10 before, but now trying 80/20), sirloin steaks, trying to incorporate organs (supplement form preferred), grass fed butter, Kiefer (easing into raw dairy; as I have skipped out on dairy for the past 5-7 years because of acid reflux/heartburn), still a little rice and potatoes, and greek yogurt. I eat all of the fruits paul recommended. Love watermelon or honey for low sugars. Always have been a big fruit lover, so this was easy to replace my sugar cravings with this. Hardest part for me is letting go of veggies, i love them to much! hah but will try to eliminate and see how it affects me. Starches are always tough to control with blood sugars. Pasta, pancakes, fried rice, etc. all skyrocketed my sugars. I think the animal fat /butter is hard to digest because of our weakened pancreas, but this is something I am experimenting with. This is where the digestive enzyme helps me break it down. Protein is the way to go! in terms filling him up. If he is exercising regularly, this is honestly one of the most important aspects. ditch the carbs for hunger. They are still important in the diet, but not the main source of nutrients, I think exercise is a huge part of controlling the sugars, in tandem with the diet change. The more I exercise in tandem with this diet, almost feels like i'm not diabetic. My sugars have been ranging 90-150 past month or so, very little lows, and limiting highs. I do have a CGM and pump, so this makes my life a lot easier. Hope this info helped!

Why does no one ever think or talk about homogenisation being the bigger issue than if milk is raw? It totally fucks with the milk's fat particles by making some if them nano sized and makes them small enough to get through the gut wall without digestion . I have a theory this is a far bigger issue than if we heat milk and is like consuming seed oil, and may be why carnivore homogenised heavy cream coffee drinkers sometimes have high triglycerides. It's not like we can't cook meat protein... raw milk will always be non homogenised, but its also easier to get pasteurised but non homogenised milk here (both off my neighbours who can't be arsed to do raw with defra on their backs after once having TB, and in waitrose (im in uk). )

Huge fan of your work, Paul, much love for your dedication and illumination of information in this space. One note: dextrose is another name for glucose, so dextrose/glucose is a monosaccharide (you had said oligosaccharide and I think in this context it is important the terminology be accurate). Further, more information regarding corn starch (and other starches like tapioca, arrowroot, etc) and related hydrolyzed sweeteners/syrups needs to be uncovered, as this seems to be compelling information that Georgi discussed with you recently. Since starch to sugar conversion is the process of making these sweeteners, are the intermediate chain sugars problematic - the poly and oligosaccharides?

This was a good video. I’m just starting to go more animal based. I’ve been a pilates instructor for over 20 years and have experimented with different nutrition styles. I even went vegan a few times but to eat very healthy vegan and get enough macros was a lot of work! I wasn’t a convenience food vegan. The first time I was vegan for 11 months and got food poisoning from hummus I bought from Whole Foods 🤮 after I started to feel better the first thing I craved was bacon, egg and cheese sandwich lol. I tried going vegan a few times after that and felt horrible…nausea, headaches not fun. So I realized then that my body needed meat, eggs and dairy. It has been a little hard for me to give up on salads though. I love a good steak and salad that I make here. My main issue is my spouse. He likes eating plant based, and he isn’t a fan of beef. He prefers chicken and pork when he eats meat. He loves pizza, Pretzles, grains and sweets too. But he’s also always had issues with his weight and I typically don’t have weight issues. It’s very interesting to see how some people complain about their weight or their health yet cling to ways of eating that don’t really improve their health and actually make it worse. I try to lead by example, but he’s a stubborn one and I just don’t even try to change him except when he passes his bad eating habits on to our kids. Then it irks me

I think a big thing Paul misses sometimes when he rags on keto is that he was keto for a year or two (if my memory serves me right). I view ketosis as a type of metabolic detox. The benefits to your mitochondria and gut biome can't be ignored. But long term ketosis is always the point of contention. I'd argue he does so well with fruit and honey because he first went keto, and experienced that metabolic refresh. I don't think jumping headfirst into an animal based diet with hundreds of grams of sugar from fruit and honey is the best route. But it does seem like over time, most carnivore diets are optimized by adding some carb. I've tried zero carb, 20 grams, 30 grams, etc. and I do feel a little better with some carb but I'm still in ketosis 99% of the time, eating around 20-30g carbs. Myself I'm very hesitant to leave ketosis on a carnivore diet, and do keep in mind the honey and fruit he has access to is nothing like what you will find in the supermarket

This is getting tremendously conflicting. But in fairness he did say each has to find their own. 6 years ago had cancer and went through intensive chemo and radiation (and surgery for tumor removal). So since that time I’ve been quite obsessed about researching what is best dietary approach to preventing cancer recurrence. Perhaps one year ago I landed on several things that resonated to me. One is the “steak and eggs” diet. As the findings clearly show that cancer cells have a GLUCOSE METABOLISM. Clearly Dr Saladino is doing something right. Surfing two hours each day sounds like a dream to me. But damn good for him that he figured out way to design life to make this happen. But for an office guy like myself, who gets half hour of moderate exercise most days if I’m lucky…I’m having trouble rectifying how ingesting honey and/or fruit daily would be good thing. It seems in context, the pros of minimizing free glucose in bloodstream would outweigh potential effects of “long term lower carbs being bad for humans”. I do like that Saladino pointed out (with good pun by the way) that ‘some in this carnivore space’ become calcified in their beliefs. I have similar view from a number of related videos I’ve seen over past few years. I’ve enjoyed much info from Dr’s…Baker, Berg, Ovatia, Kiltz among others. They all have great info. Anyhow I’d greatly appreciate input from anyone from the perspective of person who is proven / prone to cancer….and again; how to rectify eating honey and fruit WHEN cancer has a glucose metabolism.

I agree with you. My stepfather eliminated his cancer by following his treatment AND eliminating sugar completely. They were shocked when his inoperable tumors disappeared. I follow Dr. Seyfried and he believes that low carb is the way to go. I find that sugar and high carbs made me insulin resistant but it also made me look and feel old. Now being off the sugar and carbs, I feel so much more energetic and look so much younger. I cannot agree that sugar is good for us on a regular basis. Humans only got a few berries and maybe honey on rare occasions a few times a year. Clearly, his extreme sports lifestyle affords him more cheats. When I did black belt training 3 hours a day and yoga an hour a day, I could eat anything and not gain weight. But when life got complicated and I had to stop all that, I gained 35 pounds. If you can't exercise like a beast, you cannot eat as many carbs as he is eating.

Two of those of course being beans and corn (also worth mentioning, the importance of potatoes in the Inca Empire.) Was it simply the rest of their lifestyle that offset the shortcoming of those food sources? Was the consumption of beans and corn proportionately low in their diet for it to not matter?

I'm shocked. This is the first time I've heard raw dairy NOT being vilified. I raise my own goats on this mountain, and they eat a LOT of the weeds and brush here. I know there are LOTS of healing plants up here, and that the goats eat many of them. I drink the fresh, raw milk, sometimes make cheese and Kefir with it, and absolutely refuse to give it up - I can't really say I'm carnivore, as I do drink the milk, and sometimes use seasonings on my meat. I even eat SOME fresh veg from my own garden once in a while (clearly a seasonal thing). I started out Keto, went to carnivore, and now I add the milk, fresh real veggies (lowest carb and oxalate content). Definitely feeling the best I have in decades! I've lost probably around 60 pounds total, all my clothes hang off me (thank god for belts!), and my energy levels are up. I'm looking into starting my transition into the carnivorous lifestyle. I'm starting out with a ketogenic diet and then gradually move across into cutting out vegetables all together. I have no real reason to do this though - I'm 28, 5'10" 165lbs, I'm in good health, rarely sick, exercise most days lifting weights mostly; however, I'm more focussed on preventing bad health from occurring later on in my life rather than waiting around for it to come before doing something about it. I am concerned with weight loss (took me 2 years to get to this weight as I was 140lbs back then) and am worried about losing hard earned muscle growth. I guess as long as I remain in a calorific surplus, this shouldn't be an issue.

"If we try to tweak too hard with tonnes of vitamins or synthetic substances the body doesn't tend to react well to that" - That's a nice concept in theory, and I would agree that it applies for the average person in fair health who is simply seeking to maintain an optimal diet long-term. That said, I think you are wrong about this in the context chronic disease caused by xenobiotics and other modern factors. There is a substantial population of people who are non-responsive to dietary changes of any kind who require high-dose nutritional supplementation for recovery. Relying on the diet to meet nutritional demands of the 21st century is a losing battle for many people, given that the environment actively steals micronutrition from the body. But when you layer on inflammation and conditions characterized by oxidative stress and severe mitochondrial dysfunction, synthetic nutritional supplements can achieve miracles. Man-made problems sometimes require man-made solutions, no? You should take a look at high-dose thiamine, for example. Its mechanism of action is usually not through fixing a nutritional deficiency, but through multiple avenues to counteract cellular stress of any kind and restore oxidative phosphorylation in the face of hostile chemicals, toxins etc. There are some people with PD, Fibro, CFS, etc try carnivore or animal based or keto, sometimes for years, and then only achieve remission with this nutrient in supraphysiological doses, and depend on consistently large doses to maintain benefit.

@@KenWang2 Fat is by DEFINITION the thing you burn when losing weight. What do you think body fat is made of? When you run your body on predominantly fats, your body supplements with body fat. Insulin blocks fat burning and blood sugar raises insulin. Healthy individuals can transfer back to fat burning after 3-4 hours after eating carbs. Fat people cannot nearly so easily, they get hypoglycemic because even after blood sugar goes down, insulin is still sky high and drives it down lower while still blocking fat release.
