You sir are an incredible multitasker! Your ability to not only remember multiple orders, time the orders out so guests receive their meals as a group and keep a positive attitude for the others working with you…I can tell you are a natural leader…someday you will own your own restaurant…I can clearly see that forthcoming

Never worry about people getting bored watching hey, there's a guy I watch that cleans rugs... yes that's right, cleans rugs. He does the same thing over and over and me and a million other people watch him do it, it's comforting and relaxing, just like your vids.

A little tip to make the burritos a lot better is after wrapping them. Let them sit on the grill for a few seconds get that cheese to Melt in real nice.

when you do stuff like this for a living you get really good at doing shit like that. A guy I used to work with had a little chain system with cracking eggs that made him look like he had three arms it was wild, dude could crack a whole tray of eggs in seconds.

That chorizo burrito looks bomb! My abuelita used to make frijoles and chorizo burritos. I don't see them anywhere in SoCal.... So I just make them at home. Delicious!

Ive been a Chef for over 20 years and my FAVORITE cuisine and restaurants to run are diners or breakfast spots and I notice your using Phase.....may I suggest you switch to Whirl?...Its so good that I use it at home when I cook breakfast😅...but seriously you should really be using a trusted butter alternative instead of shortening...will give it WAYYYY more flavor and give it that "home cooked" breakfast profile...ill do cost comparison in a reply

The difference in scrambled eggs is that I don't particularly like the texture of the white part of the egg, so id you use the fork, it kind of dissappears.

1:05:10 Maybe the difference is how it looks. They want he eggs blended before you cook them. I think I read on the web that you wisp the eggs and then put them in the skillet. To start the cooking and then chop them will not look the same. To me egg is egg. I like mine over easy with thy yellow not totally cooked, just the white part. Blends well with the hash browns.

You should prep scramble eggs in the morning. Then used a scoop that equals 2/3 eggs per omelette/scramble eggs.

Scrambled Egg Difference to me: The size of the scramble egg Chunks. It is a texture thing for a lot of people, actually. I like the smaller chunks of scrambled egg. which is to constantly scramble. When chopping up at the last minute, it ends up , to me, more a " scramble frittata" like texture and again, to me, over cooked. To put it in another context too, a lot of people like egg salad differently, small chunks vs. large chunks. Smaller for me is better . It is all a personal preference thing.

I love watching your videos, and it's obvious you've got the menu memorized. I've got to wonder though, what's your opinion on people who order off menu items or custom orders? I frequent a diner and sometimes I'll order a cheeseburger as an omelette (usually the lunch special burger). I got some bombastic side eye from the cook 😅 Probably because 3 other people ordered the same thing after they heard me order it 😂 but she (the cook) was cool about it.

I bet you worked at ihop before seems like ihop training might be a tams where he works. Only thing that made me a bit uneasy was the fact that you didn’t cook 80 percent of the hash brown on both sides. Respect for being a one man army though!
