yep. In Europe and the US fish isn't automatically frozen. It does however need to be frozen for sushi, even though I think it isn't in Japan.

Sous chefs can sometimes become stars. I worked in restaurants that I, a food server, work with the likes of Michael Mina, Thomas Keller, Charlie Trotter, Bradley Ogden, Todd Humphries and Wolfgang. Hard working guys who were very very lucky to make it big. You have a great attitude. Never once saw frozen fish in my restaurant

I love your vlogs. Honestly I would love to relocate to Vancouver if it weren't so cold and rainy half the year. Living in LA has ruined me for anywhere else weather-wise except for San Diego or Palm Springs which have even better weather.

Always enjoy your chatty style.....and the insights, like freezing fish everywhere in Canada......I am wondering about the fresh caught walleye I ate on the French River (Ontario) during my Boy Scout days! No paracites in Ontario, right? At least in the 1960s!

Most of Seafood in the hotel I used to work in are frozen.. in food safety rule seafoods and meats are safe to keep in -18°c for maximum 6 months

I have increasingly been really interested in your channel and Joe's channels. I thing you both bring a very much needed reflection on the issues that are important, racism, gender stereo types, relationships. To be completely honest, i really like your food vlogs, the pork ragu was amazing. In my opinion, no person has a right to judge, hate or be derogatory to others especially people we don't really even know.

If you don't mind me asking, what restaurant do you work at or what area of the GVRD do you work in? I'm also a Vancouverite and used to work in the hospitality industry as well, I wouldn't mind checking out nikkei cuisine. How do you find the industry now? The sector seems to be coming back from the restrictions and with things opening up, this season should bring revenues back to a pre lockdown level. Thanks for the videos they're always relaxing to watch, cheers.

HA! get use to it in canada, all proteins are going to be frozen or on ice doesn't mean it's poor quality, unless it's a super special limited supplier who has a special one on one relationship with the restaurant, west coast might be luicker but japan is +7000 km away so even trying to import "fresh" is pushing it but you can still get great quality.

bread too, all bread is frozen, no one is putting in hours of daily labor to pump out hundreds of bread items daily, there might be dedicated dish on menu where that specific bread item might be made to order sometime a day or two in advance.

Ryan, will you do a video on best practices for food safety in the kitchen? It seem like I wash my hands 5 to 10 times whenever I'm working with beef or chicken out of fear of contaminating anything --and my hands end up dry and chapped. When I watch professional chefs work with meat, it doesn't seem that they're washing their hands anywhere near as much as I am. Anyway, I'ld love to see a video on best practices for safety in the kitchen and safe food handling. Thanks.

I only eat raw meat, it's much safer than cooked meat. I wouldn't worry about it too much :)

Hi Ryan, first - thanks for your videos, I found them very useful; could you please make a video about industry "rules." You already mentioned the unpaid stage in one of your videos. So I was prepared when one restaurant in Gastown asked me to come for the stage. But I was surprised that in two places chef told me that they would pay X rate + tips, and then when I started to work, it was less. I felt so upset. Is it a common thing?

in Japan the original sushi..YOU DON'T USED FRESH FISH. They usually let it sit for at least 2-3 days. They say it's what make the flavor. Unless its sashimi.

I really want to move to Canada (I live in Oregon) in the near future. Maybe not Vancouver (I'm a teacher so prob can't afford it) but there are so many gorgeous places and wonderful people I have no doubt whatever my final decision I'll be happy there.

Hang on. Someone talked about not eating frozen fish? BRO, Generally I hate to be "that guy" but sometimes I really dig it. And today is that kind of day. BECAUSE...there is NO SUCH THING AS FRESH FISH. Unless you catch it yourself. Fishing Boats don't go out, catch a bunch of fish, then return to shore the same day (LMAO can you imagine!?). Most, if not all, fish are flash frozen ON THE BOAT. This includes that fresh fish being sold at your local fish market. Hell, most fish are flash frozen on the boat...and shipped to the headquarters of whatever corporation who owns the boat (Chinese corporations own about 85% of the united states fishing market) which means the flash frozen fish is actually shipped to china...BEFORE it is organized and shipped to the united states...to be labeled as Fresh in your local supermarket.

Sad if true. That would mean they're explicitly lying to me telling me it's never been frozen. But I've even caught them lying to me before telling me a certain salmon is wild (Ora King) when really it's just higher quality farmed

Everything was going well until you said "Imagine not knowing there's such thing as fresh fish... In 2021". By that comment alone, it can be deduced that you, in fact, like being "that guy". "That guy" : someone who thinks they know it all but in reality, they have basic knowledge of various topics so that they can maintain being "that guy" who demeans other people by being a snarky prick. We know you had a hard on when you wrote a whole paragraph correcting a random stranger about fish.
