The days are a bit mixed up and out of order, the beach walk was on the 2nd Jan, the cheese making was on the 31st December and the foggy day was even earlier, but it made more sense putting in the order you saw it!

The sheeps milk cheese is a very soft fresh cheese, it took only about an hour to make and was ready to eat immediately. We served it with olive oil and a sprinkling of salt but it is also lovely with walnuts, slices of pear and toasted bread.

At the risk of saying too many things on this precious channel I just want to say watching the interaction between all of you in English and Italian with the subtitles is fascinating because I get to see the construction of the language, how elegant it is! Many Italian words are close to English words, and I love seeing that and hearing it. I adore this juxtaposition of English speaking culture and the wonderful Italian Positano culture. For example, it's a common misconception that if someone doesn't understand what you're saying they are stupid. when you see how elegant, subtle and eloquent another language is, you see how intelligent they are, and your cultural bias takes a beating, which is a good thing :-)

I also love hearing Carlo speak Italian. My father was born in Sicily but when he came to America, he did not speak Italian except to the older relatives who also spoke Italian. As the youngest of 8 children, by the time I was born, most of the older Italian speaking family members were deceased so there was little opportunity of hearing Italian at home. I learned Italian in school 50 years ago but never had anyone to speak it with. So listening to Carlo is an education for me as I can recognize some of what he is saying and also learn new words.

We live about 3 hours south of the Amalfi coast in the little medieval village of Sermoneta in an old stone house and to keep us warm and cosy in the winter we have the same heating system as you - a pellet burner or wood burner. Prior to that, we only had the original open fire - very romantic but no good for keeping away the chills and dampness of the mediterranean winter. With the pellet burner it's now as warm as toast!! Love the videos.

Dear Nicki Positano Family, no matter how much you don't enjoy it, the Question/Answer segments are a lot of FUN for us fans. Not only do they "let us in," they also reveal the true reality of Positano life, which makes watching this channel that much more addictive. It's not all fantasy and fake. Here are two more questions: How does Holly not fall off the vespa? How can your feet handle those steps in flip-flops, since flip-flops are famous for feet accidents? Of course, Carlo speaking Italian is SO ROMANTIC. I also love to hear Nicki and Skye speak Italian. The Italian language is music to many ears. But I am SO GRATEFUL that Nicki provides translation. I'm sorry the work does not make her happy. I just wish she would allow the translation to last a little longer on the screen. IMO, her edits are too quick and fast for me to capture all the words. I always have to stop the video to finish reading, and that is so annoying. Also, if you're going to cook on the show, PLEASE SHOW THE RESULTS. Even if a recipe is not exciting to you, it's exciting for the viewers. I did not need to see a t-shirt tie-dyed in marmellata juices, but I would have loved seeing the jarring process finished, did the marmalade solidify?, and how about a taste test from fellow family members? What did the cooked fruit taste like? All the cooking that is done on your channel is fascinating to us, especially those of us who travel to Italy for the food. Luca's love for the garden is also fascinating. Would love to hear more about his talent.

I think Carlo speaks perfectly well in English. It’s always charming to hear Europeans speak English. His English is probably a lot better than my Italian! Lol! Always enjoy your videos!
