I saw a video from “Cooking with Natasha” and she placed the cold sticks of butter in waxed paper and roll it out with the rolling pin, then placed the flattened butter disc on the rolled out dough and folded it from all sides. The butter did not “leak” out.

Thanks for sharing Anvitha, yours is much simple , like you said, after you tried this recipe, you never buy any more Puff Pastry. Her recipe is -- 3 cups flour, 1 cup extra for dusting, 1 1/2 cup butter, 1/2 lime, 1 teasp salt, 1 cup of ice water. Total fold 4 times and chill 20 mins each time.

I made this yesterday and it turned out AMAZING! I did leave it in the fridge overnight since I started making it late and it was even better. Thank you so much for sharing! (for those who have trouble with butter leaking out, just patch it and dust it little more. You can't screw this up:)

@@sofiyaindorewala325 ... I just use regular butter. If you use salted butter, remember to compensate for that by reducing the amount of salt in the filling recipe (if there is any).

A good trick to measure 1 ½ cups of butter if you don't have the sticks: fill your measuring cup with cold water up to 1½ cups line then scoop up spoonfuls of butter and add to the water in the cup till the water raises to the 3 cup mark. pour out the water holding back the butter and there you go 1½ cups butter :)

A great tip is to freeze your butter sticks, then shred them w your grater. The frozen butter incorporates better and makes a puffier end product.

freeze your butter, or grate it and put on the layers as you fold... keep the butter chilled

I have converted the ingredients assuming the cups are US cups and this was what I found 3 cups Flour (Extra 1 cup flour for dusting) - if 3 US cups this is 1 1/2 pints or 700 mL 1 ½ cups unsalted (as salt in recipe) Butter - if 1 1/2 US cups this is 12 fluid ounces or 350 mL ½ a lime for the juice 1 tsp. Salt 1-cup water - if 1 US cup this is 8 fluid ounces or half a pint or 240 ml I will try it and see.................

It's been a couple of years since this video was done, but, I'm gonna say something.lol, freeze the butter, you can grate the butter and spread on the pastry, fold and add again, until your butter is gone, keep the butter chilled...

Always made my puff pastry like this except I use yeast dough and spread the butter before the first folding. Takes 3 days, ekkkkk. Gonna give this a try and see how it compares.

Rolling and butter 4 times, i guess that is where the flakiness comes from. I am getting better at making pastries, the more I do it. I made some this afternoon, with blueberry filling...............But cream cheese is my favorite.

do not use margarine. it has way to much water. you want the oil to melt away and the pastry to sorta fry as it cooks. for perfect flaky goodness.

Ive tried several recipies but on baking it, the butter oozed out,i read here that pressing too hard makes it do that on rolling?its not easy to roll out a thickness of pastry type,but i shall try again using your method Anvitha. :)

+Angel Angel - recipes are only approximate. Many factors come into play - humidity in the room, the amount of moisture in the flour, variations in flour etc. Glad you were able to figure this out and make it work.

Hey Anu, you can find that mat online in Ebay or Alibaba, the original one is french and called Silpat and its a bit expensive but you can get other similar at a reasonable price if you search for silicon pastry mat.

Hi, try folding the pastry and rolling it out couple of more times before baking also do not thaw the pastry sheet too much before baking, key is all the ingredients required to make the pastry should be chill

I used margarine instead of butter, and it turns out horribly, it just melt when i roll the dough and leak everywhere... So do we cant use margarine for butter as a subtitude? Anyone for advise???

+Ed Patrick Pingoy I think she meant it'll keep at it's freshest for 2 days in the fridge and last 15 days in the freezer, not necessarily that you must put it in the fridge for 2 days minimum. At least I hope so!

+Nina Bisk - Good heavens people don't pay attention. She said you can use it right away OR keep in fridge for(up to) two days OR freeze for up to 15 days. That way you can make the puff pastry one day, and make your filling when you get ready. Sheesh.

Sabrya Murray The pastry may be refrigerated for 2 days or frozen for 15 days. Or refrigerate it for 10 min. more before rolling out for shaping and baking.

If some butter is slightly melted and being pushed out when you're rolling or pounding the dough, how to fix it?

+Jonathan Chamberlain Depends on how melted it is. I would try to put my entire pastry board into the fridge to chill it, then scrape it back up and put on top and fold. I think the butter needs to be slightly chilled to get those flaky layers. Rolling and folding it so many times is the key to getting all those layers. Good luck, this is a lot of process and time to waste if it doesn't come out right! Puff pastry is an all day event.

Thanks for the advise, but I think the cause of my problem is that the dough had a small tear or crack somewhere when I folded the butter in it like an envelop and rolled it flat, so even if the butter was not really melted, it was still pushed out. By the way, the technique I adopted was something different. I formed the dough into a disk, cut a cross in the middle, sprinkled flour on it, refrigerated it for a few hours, brought it out, rolled it into a large square - or a four-cornered star, then enveloped the butter with it. It's not easy and it takes a lot of practice to know which part of the dough takes pressure and therefore is likely to break.

no yeast, the "book folding" of the dough after it is rolled out, with chilling the dough in between, is what gives you the flaky layers! I never tried this recipe, but it looks very good, and similar to my pie pastry. Regular all purpose flour is what I use for my pies!

Serenity’s Life It may be because surrounding temperatures is high , just keep it inside refrigerator immediately and try to roll it again

Thank you this video was very helpful im trying to learn to make pastry doughs; also do i have to keep the butter room temperature not melted but not to soft ?

I tried the pastry but it didn't open in layers as it should.I followed all the steps as yours still the top part was hardeded n inside it was uncooked
