I just made these. I have to say this recipe is my favorite one and I’ve made a handful of cookie recipes by Cupcake Jemma. The soft and caramelized bits that run out of the cookie just sets it apart. Loved every bite of it.

I've made a similar flavor, but I used applesauce as the binder instead of egg, also added chopped dried apples and walnuts instead of chocolate. Then rolled them in demerara sugar.

I have to travel a few hours for Christmas so wondering if they would be safe to eat after a few hours unrefrigerated since they have apple in them. Thanks! I worry about things like that. 🤣

If you add 1-2 tbsp white miso to the apple sauce it gives it a salted caramel flavour which is quite subtle

@@KajalSingh_Educatorit's so easy to make apple sauce & you can even freeze it. Peel & chop or slice a combination of sweet & tart apples. Put in sauce pan & add a small amount of water or apple juice so they won't stick to the pan, a cinnamon stick or some ground cinnamon. Cook on med heat, stirring occasionally. As it begins to bubble, reduce heat to simmer. The apples will break up. Taste & if you want it sweeter, add some brown sugar. Use immersion blender (or a potato masher) to your desired smoothness. That's it! You made apple sauce! 🍏🍎🍏🍎

Sometimes you guys cream the butter on its own first, and then add the sugar to cream together. Other times like this one you start with the butter and sugar together. Is there a big difference between each way?

There isn't a huge difference - it usually comes down to if the butter is REALLY cold. We always use cold from the fridge butter, but if it's super cold it can be a lot harder to bind with the sugar, so we mix it separately beforehand

When I've made their other NY style cookies I had to cut down on both sugar and chocolate chips. On some I've reduced the chocolate chips by like 100g and also the sugar by like 20g(total) or so. U just have to play around until u find what works for your taste buds.

Ive tried these twice now and can never get the compote to fully freeze. It always ends up a kind of very hard slush but doesnt fully harden. Anyone have any ideas or have the same issue? My freezer is -19°c so should be plenty cold.....

My guess is you aren't reducing the compote down enough. The longer it cooks, the more water will evaporate. 10min was nowhere near close enough for me. I do closer to 30min to reduce it down enough.

It is most likely that the apples havent been cooked down enough. The fillings are a lot softer than Biscoff/Nutella so you may need to keep transferring them back into the freezer as you ball!
