I don't really think the balloon is food safe, the inside has a chemical that tastes horrible. Normally you get that white cast in your lips when you inflate it. Can't that be dangerous?

You mean "at what point does she put apples with cinnamon inside the mousse apple"? She put the apple cubes with cinnamon inside small balloons and brought them to the refrigerator. Then she made the vanilla mousse and placed it inside a bottle. Then, he took out the balloons (which already contain apples with cinnamon) from the refrigerator, and inflated them to the size of a normal apple. And he filled them one by one with the bottle that contains the vanilla mousse. This you can see in the minute 02:52
