A couple of organizational notes: it’s best to start by making the custard (like the day before); egg whites can be frozen in plastic containers (such as empty yogurt cups) and used later. I make chocolate mousse using only egg whites and everyone loves how it comes out both firm and fluffy. I hadn’t made a crumble in ages and I only have a little rhubarb at my disposal. Perfect recipe for Mother’s Day. Thank you.

Hi, I love rhubarb, but I thinly peel it before. The skin consists of oxalic acid which is not very digestible so that many people have problems with non-peeled rhubarb. It´s an easy step to do since the skin comes off with no big effort. I´m going to try this crumble but have to wait for the fresh rhubarb in upcoming spring 🙂
@ChefJackOvens2 жыл бұрын
It’s the leaves that are poisonous, you don’t need to peel rhubarb unless it’s rock solid. This also depends on the variety but the rhubarb that grocers sell is safe to consume

Rhubarb crumble always reminds me of my Mum’s first visit to her in-laws. My grandma made this as a dessert and when my Mum was halfway through she proudly declared “my first urine when on that rhubarb in my garden every morning.” Still can’t help but giggle every-time I eat it now.
