Funny how it wasn't mentioned anywhere, but this is in fact a modern take on what was known as a "subtlety" during the middle ages. Main courses and desserts that were often made to look like they were a completely different dish were incredibly popular among the rich and powerful back then, especially as highlights during large banquets.

Hello - did you use the gram measurements or the ounce measurements for the mirror glaze? For his mirror glaze, the listed measurements are off. 220 grams of white chocolate is 8 oz. not the 10.5 oz indicated. this is a big difference, Thanks for your reply.

How much vanilla goes into the jelly? In the recipe, there's only a vanilla amount for the mousse. Do you use vanilla paste for the jelly as well or extract/soaked beans to avoid black dots in the jelly?

SpaghettiToaster: The filling I made was a caramel sauce which froze in the half sphere molds very well in my regular freezer. I adapted it from a recipe I have for rosemary apple pie.

These are fairly easy to do once you have the mold. They look impressive obviously. But, the best thing is that they make the home chef feel - well I do not like to use the word "proud" so let me say that it makes you feel really really happy. Especially when you serve them to children. And, I tell everyone Bruno made me do them. Thank you Bruno.

OMG I JUST FOUND MY MOMS male counterpart! I swear, she is THE best Ukrainian/American pastry baker that I know of! Her baking is incredible, both taste wise & presentation wise. She is a perfectionist at heart and on a complete other level with the knowledge of expert techniques and recipes. I've told her many times she should go to a bakery show/TV competition!! Hands down she would WIN! :D

I am halfway thru making this wonderful dessert. They are in the freezer now. So far it has been fun and easy. I am concerned that I pushed the jellied apple centers too far down into the mold but if so, I will do better next time. By the way the white chocolate mousse is DELICIOUS on its own. I only have one mold so I had a lot left over and we ate it and loved it as is. The only gelatin leaves that I had on hand Bruno were "silver" strength so I hope that the mousse holds. If you read this, I hope that you can tell us what strength of gelatin leaves that you use so that I can order the right strength. Thank you for your fun and wonderful recipes Bruno. Turmeric is often used in place of saffron to provide color and flavor. It is mildly aromatic and has scents of orange or ginger; it matches perfectly in addition to create little dots to resemble golden apples skin as vanilla seeds do too.

That was an ultimate dessert chef all included! Sweet,fruity,soft and the same time cracking texture! I get to temptation to recreate that fantastic sweet. The only thing it was a little hard for me was the apple stem. So if you do not have a problem please be more specific how to do it. What kind of chocolate ,and if you heat it up a little bit. I think you just have to get lucky with the chocolate and blend it well, but I suppose you could just use marzipan and coat it with coco powder. That would be much easier to shape.

It's worth it and to all of you, who think it's to much work. Well don't make it in one go. You can split it down and make it when you got time. It's a special dessert for a special day. Plan it and make it in advance, so it doesn't eat up all of your time. And it's equaly delish if it doesn't look like an apple. You could make it with ice cupe trays and call it apple square or what ever.

There is something soo calming and sweet about this..makes me smile! (Searching for the releasing from mold part as I am making 'forbiden fruit' surprise dessert for my bf. Made my soil, sorbet, coolie was the most annoying part and have just made the mouse and piped it into the apple shaped mould with the coolie inside. But am a bit scared of releasing the mouse from the mold as mine is a one piece.. same shape as this guys but one piece- nervous) ..shame I cant show you a photo of it:) Omg it is a one piece mould!!! YES!!!
