Coffee Chiffon Cake 咖啡戚风蛋糕 | Apron
Tubepan size is 18cm/7"寸中空模
4 egg yolks蛋黄
20g / 2Tbsp sugar糖
1/4tsp salt盐
35ml / 3Tbsp corn oil玉米油
70ml / 5Tbsp milk牛奶
100g / 8Tbsp cake flour低筋面粉
3tsp instant coffee即溶咖啡
2tsp warm water温水
4 egg whites蛋白
80g / 10Tbsp sugar糖
Bake at 170°C / 340°F for 40-45 minutes
摄氏170 / 华氏340 烘烤 40-45分钟

The most lightest, spongiest cake ever. Thank you for the recipe Apron and loved the way you could take it out after 10 mins and put it back in the oven and still didn't flop! Also the fact that you pressed it down out of the pan and it sprung right back up :)

Hi, i tried to make this recipe but the egg whites / meringue couldn't as smooth as yours, but still works. can i know how long did you beat the egg whites and the mixer's speed?

Hi, can try beat the egg white on high-speed until become bubble form, begin beat the egg whites on low speed added sugar separately for three times until firm peaks form, they become foamy and frothy, takes about 5-10 minutes to whip the eggs whites.

Hi Apron, I will try this but I noticed that you did not add baking powder to have the cake rise like I have seen in your basic chiffon cake. Is it unnecessary for this coffee chiffon cake?

My cake drop immediately after I turn it upside down.. do you know why? Fyi, i didnt greese my pan at all, keep it clean from any oily material and so forth. But this keep on happening everytime my attemp to bake chiffon cake. Can anybody advise me on this? Thanks in advance..

Hi,maybe is the egg whites problem, you can try this side.Whip the egg white on medium speed until become bubble form, and then add 1/3 of the amount of sugar with high-speed whipping to the foam began to become detailed and expansion, and then add the remaining sugar begin whipping your egg whites on low speed until they become foamy and frothy. It takes about 5-10 minutes to whip the eggs whites.

老師你好!我做咗2次這個咖啡蛋糕,但都失敗在同一個地方,就是蛋糕底部凹陷,我用同款模具,我放在最低層烘焙,是否會底部過熱呢?應該放第幾層才合適呢?還有請問中空模具和平底模具放的層數要有分別嗎?我的烤箱有4層的。麻煩老師了,謝謝!

你好,有可能是底部过热,可以在放多一个烤盘托底一起烘烤试试,戚风蛋糕适合底层烘烤。

十个屁分钟啊,考出来根本没熟,正确要烤整整1粒钟多的我还傻傻第一次做就给你骗,还有就是170度高到淋酱蛋糕烤都还没有烤熟就焦料。十分钟完料我还加多五分钟,拿出来震一下奇怪琢磨会往下陷,然后我就直接倒扣去关烤箱电我一转头我奇怪琢磨烤盘上有一滩东西的,我近看才知道是哪些没有熟的面糊全部漏完出来

Coffee Chiffon Cake Tubepan size is 18cm egg yolks 4 sugar 2Tbsp salt 1/4tsp corn oil 35ml milk 70ml cake flour 8Tbsp instant coffee 3tsp warm water 2tsp egg whites 4 sugar 10Tbsp Bake at 170°C / 340°F for 40-45 minutes
