You might check out Mason Bates. He's a composer who spent part of his life as an electronic DJ, so most of his compositions mix orchestral with electronic music. There are large chunks of this arrangement of Aquamarine that remind me of some of his music, actually.

What they have in common is the continuous appearance of musical instruments and then their exit. Like a scene with different atmospheres, characters and lights are constantly changing. In short, it is rich in layers. Just like what you said, Joe Hisaishi's music makes an emotional description of Ghibli's scene.

I remember watching this when the pandemic started. Watching the creation process that birthed this was honestly the most awe inspiring thing of that year, minus the shitshow that was 2020. Rewatching this two years later, I still feel the magic that this piece gives.
