Old fry cook here, you can melt your butter in the pan, then lay both slices down on that thin pool of butter and slide them around to soak it up, then lay cheese on one or both slices. When you put them together you’ll find the cheese has melted, even without covering. When that pool of butter is there, you can season it with garlic salt, etc. (Jane’s Crazy Mixed Salt is my fave for grilled cheese). Awesome soup recipe! Lauren’s right, triangles are always tastier. 😀

Hi Adam, took me until now to try this incredible tomato soup recipe, and for any doubters out there, let me just say "WOW"! I used Muir Glen organic fire roasted tomatoes (fairly expensive here in Canada) to kick it up a notch, and had to use a whole can of tomato paste to achieve my desired sweetness. Not being a huge fan of cooking with wine, this worked out just fine. I left it unstrained for a more rustic soup that my son, who doesn't really like tomato soup, had two helpings of. Thank you for taking the time to make these videos. Although I've been cooking for my entire life, I really appreciate how you're showing folks just how easy it is to make delicious, budget conscious foods at home, much the same as Chef John and Mark Mittenberg. Glad to see Lauren getting more comfortable being on camera, I know it can be intimidating especially considering how the internet acts, but she did great and the meal she made looks good. Also, my mom taught me to make grilled cheese the exact same way, wonder if she learned it from the Pennsylvania part of the family. Processed factory made bread and processed cheese were made for this!

Adam’s version of toasted cheese is very like mine except I add the thinnest possible smear of yellow mustard to the inside side of one slice of bread. Then some cracked pepper. It’s so intense!

this looked so good I had to try it asap. Just made it today and it's AMAZING. So tasty. Never thought I'd be able to make good tomato soup that both tastes like the nostalgic stuff from the can but also is better! They ran out of fennel at the supermarket so I did a switch and used celery and fennel seeds. Absolutely lovely. Thank you!

celery works quite better in terms of soupy tastes, and fennel seeds seem to have more of a smell factor so this could be better

My wife is Russian and wasn't too much into smooth pureed soups, including tomato soups. I say "wasn't" because I followed your recipe and she LOVED it! (as did I, but that was pretty much a given) We believe the fennel is what really did the trick, bringing some really nice vegetably freshness. We also loved the spicy oil, it brings a nice "oomf". Thanks for your great recipe! (oh and sandwiches were great too!)

I've been making grilled cheese, especially since my GF got me an immersion blender for christmas which makes an awesome tomato soup. I ran out of butter the other day and decided to use ghee instead. I highly recommend you give it a shot. You're always going to burn your butter when you cook a grilled cheese, and the ghee is great because it doesn't have the milk solids to burn!

One of my favorite combos was Swiss cheese and the store bought sourdough that's wide and has a bit more of a tender crumb. That's almost 2 sandwiches as one, and I can cut it into sticks of sorts, kinda like toast soldiers, to dip in my tomato soup. Slightly sour bread and sort of funky cheese, works good for me.

It's tough to beat a proper grilled cheese sandwich, and Adam's is spot on perfect. Notice that he used the Un-Wrapped type of American cheese versus the "singles" type that are individually wrapped -- it is a slightly higher grade of cheese (and what I always use). A slice or two of deli ham in the grilled cheese makes it more of a meal, as does a few pieces of already cooked bacon. On a cold winter day when a grilled cheese sandwich is not quite enough, I like a Grilled Tuna sandwich (without cheese). While I do use mayo to prepare the tuna, I definitely use butter for the grilling side of the bread. A nice hot tuna sandwich goes with most any soup, I like to pair it with chicken rice soup or even ramen noodle soup.
