The first time I've eaten this was in Alamosa Colorado cooked by my pastor's grandmother. He we were in for a treat for authentic Spanish food, when I saw the dish that was being served, I whispered at my pastor "This is not Spanish food, it's Filipino food", after few hours of this back and forth debate, it dawned on us that the Spaniards were in Mexico and Philippines for 300+ years. The Philippines also has a town called Mexico due to Mexican soldiers, slaves, and prisoners that were brought by the Spaniards via the Manila/Acapulco galleon trade. I was born and raised in the Philippines and we have a similar dish called Nilagang Baka(boiled beef) it's usually served on weekends and definitely Christmas eve after midnight mass and New Year's eve at our house.

In the Philippines we have the same called Nilaga. Very simple using the same vegetables but without the corn. The seasoning has two different styles. For the plain and easy is with Bay leaf, salt, Pepper, to taste, and cabbage and potato. The sour version is using the same vegetables or with Bak Choy or Chinese cabbage but with Tamarind soup base or the Tamarind pods called Sampaloc. I think the Spanish settlers from Mexico came to the Philippines and introduced the recipe. The Philippines didn't have cows or cattle before the Spanish colonizers brought them over from Spain and Mexico. The Carabao or water buffalo was used as a working animal to plow the rice fields. But I love cooking this boiled beef recipe. I think this was a very common recipe in all of Europe with boiled beef soup.😋😋😋😋😋

This reminded me so much of my moms caldo de res, I could almost smell and taste it! I was enjoying it vicariously through you lol It brought back so many good memories of her cooking. I think I've watched like 10 videos so far in a row because your style and food reminds me so much of my moms. She was a great cook, she made everything taste so good. Oh my Gosh!!! EVERY ingredient you used, is what my relatives back in Midland, TX would use!!! 😁 I sure do miss H-E-B 😔. Living in Portland, OR has some nice authentic Mexican food, but doesn't compare to that of Texas. Made this Caldo de Pollo last week & it INSTANTLY took me back to all my relatives gathering to enjoy a meal like this. ☺️ Thank you for sharing this with the public! Shank or oxtail is the best but man is it just me or has the price of oxtail just gone out of control? I shop at HEB just like Arnie here as I'm in Corpus but I've found some better deals at local Mexican Butchers. This is a great recipe. It's almost just like my wife and I make but she sometimes uses some ancho chiles that she rehydrates in hot water.

Arnie you shared with us a salsa verde recipe that I really enjoy.. now I would like to share one of my favorites... a lb of jalapenos and lb of serranos. Place them in a colander in a dry cool place as little humidity as possible, let them age till they turn colors yellow,green,red, orange takes about 4 to 6 weeks(remember to rotate them once a day) believe me it's worth it. Then make your salsa 🔥🔥🔥🔥

Hi! I boiled the soup bones as directed but the scum was slimy and green. I googled green slimy scum in bone broth and found it was from sick cows or very old bones. Scared me so I threw it away. Have you ever had that happen to you?
