I’ve never really liked Mexican food until I started watching your videos. You did a video on all your pots and pans you use but you didn’t show your collection of authentic Mexican cookware. Rachel I found an easy way to remove the floating protein is to use a small handheld strainer. I sure do wish I was your best friend and neighbor 😊 I would bring the dessert

@@lorschild It’s called Cazuelas. They come in all shapes and sizes. Found at any Mexican grocery store or at Flea Markets. Here in Dallas a good size like hers will run you about $60. - $70. Dollars. But you Must cure it before you use it! After you cure it you can use it on a stove top like hers or on an open fire. That’s why you cure it first, so that it doesn’t crack on you when you put it on an open flame. 🔥 KZbin has many ways to cure your Cazuelas. Rachel has a video on how to too. They are well worth the price and will last you forever if you take good care of them. Hope all of this information helps you. Enjoy. 😊🌸

This reminds me a lot of a soup (minus the Mexican seasonings) that my mother made often when we were growing up in the Midwest, and one that is still one of my grown children’s favorites. Meat, cabbage, all kinds of vegetables and hers was heavy on tomatoes that my dad had grown in the garden and canned. She made a huge pot and we ate it for days! De-licious as you would say! She called it Mulligan Stew and your video has given me a hankering for it! Love your new patio and outdoor kitchen. Your dinnerware in this video is spectacular! I've made your caldo and it was fantastic. You are my go-to for all Mexican cooking, I married into an Hispanic family and tried to learn throughout the 32 years we were married (my husband died in 2013). It wasn't easy as we did not live close to one another. Finding you was such a blessing and I am so very glad I did.

Hi Rachael, I love your videos, and even if one is for something I have no interest in making I watch anyway, because I aways pick up helpful tips. But let me tell you what I love most about you... I don't have fond memories of my hateful mother, but there was a lady who lived across the hall from us named Eva. She was a wonderful, kind lady and a fabulous cook, and would often send one of her kids over with a plate of one of her yummy dishes for me. (As a child I was too scrawny no matter how much I ate...but I guess the calories all go into hiding until you hit middle age, then they attack all at once! 😄) Not only are you apparently a terrific cook as she was, but you look so much like Eva (who has since passed on) that it's always a special kind of comfort to watch you - it brings back fond memories of someone whom I love and miss very much. Thank you for being there; I pray for you and your Ron often.

Growing up in south-central Texas, caldo de res was a staple in our home. Mama made it just the way you do! This brings back so many memories of cold winter evenings with everyone coming in from the cold and gathering at the kitchen table with a big pot of caldo that mama made from scratch. Rachel, that is a delicious looking soup. I didn’t know that about scraping the proteins off the top. I’ll have to remember that. So nice that you can still enjoy your outdoor kitchen. I live near Houston on the coast and it’s still very warm here too. Thank you for sharing with us. Love in Christ

Yum, my dad always says it’s not caldo de res if it doesn’t have ox tail and anillo.😄 I made some today!… but only had ox tail. Still came out delicious. Used some local grown cabbage and carrots 😋

Rachel, this comment is long overdue but this caldo video is the clincher to make contact. I keep a journal for my grandchildren titled “Grandma’s Guide …” It is a plan for the day when my kitchen shuts down permanently. Your cooking channel is one of the places I have recommended to my kids so they keep living the traditions.
