We are gearing up for our Thanksgiving season and we have the perfect rice side dish for you! This rice is equal parts delicious and easy! It was a tradition in Jo's family to have this at the Thansgiving table and once you try it, you will want to join the tradition as well.
Ingredients:
¼ cup corn oil
⅔ cup of sofrito
¼ cup of olives
1 tsp sazon
½ cup tomato sauce
2 cups of beans, rinsed
4 ½ cups rice, washed
5 cups of water
1 tbs salt

It’s literally the pot for perfect rice (if you know how to cook) 😆😉 it’s my favorite pot to make any kind of rice . But definitely a wide bottle pot as well but the caldero is my first choice 😍

I am half Puerto Rican and Italian, so I learned how to make a few dishes from each culture aside other cultures that I have learned. Now, having said that, all my Italian relatives that cook use the same ingredients, but cook each dish differently, which sometimes can differ in flavor, not bad, but different. Here in Puerto Rican style cooking, the way people make their rice is different with each family while having almost the same ingredients. So, it comes down to each generation learns their dish from their parents or relatives. It’s perplexing, but in the same time intriguing in the order in how you layout the ingredients then cook the dish. Some would say, put this first, then that, and so on, while others say… just throw it all in the pot and cook it! lol! As long as the flavors are intact, it doesn’t matter how we cook it, but sometimes it does matter otherwise the flavors can be altered.

Cuando usen aluminum foil recuerden que el lado that shine goes facing the food. The opaque goes on the outside because that side was never buff. Rice look delicious. Keep the good work

My mom does all these steps pero she puts like fresh ham that she bakes into the rice it’s just my fav but qué rico 🤤 love this over gandules

I use long grain rice and I don’t rinse the beans, corn oil my favorite along with olive oil. Have never cooked with any other rice. Long grain was hard enough. Find it difficult to mix anything with the rice. It burns. Good to see you jo. Have never been able to cook arroz con pollo or arroz con gandules. Now at 73 chances are won’t be able due to health. Had a stroke so enjoy watching you cook. Sending out to others to enjoy you too and learn.

Hello and thank you for your wonderful recipes. I have tried a couple of them and I am hooked. However, there are a couple of things missing here and no one seems to be asking the right questions. So here goes. Please remember that you are talking to and teaching the masses. So it's important that you be thorough in your descriptions. For instance, what grain of rice are you using? The rice-to-water ratio matters depending on what grain you're using. It's hard to find medium grain rice in most places. Most people have cans of beans not cups. You stated that you rinsed your (cans) of beans. So did you use two cans of beans (which would equal to more than two cups) or did you just use one can? And I think it's very important to tell everyone what stove settings you're using and when. Especially when your asking us to set our timer to six minutes, 20 minutes, etc. thanks so much for reading my comment. I look forward to using more of your recipes.

Do you use pinto beans or what variety of beans? I can imagine that rice tastes wonderful. I have a couple of questions for you. Do you make your own Sofrito and Sazon from scratch? I can buy Sazon but I prefer to make spice combinations from scratch to avoid the commercial food additives. If you have the videos and/or recipes for both of these, please advise. I like the fact that you and your husband are from Puerto Rico. I am from Honolulu, Hawaii and my wife is from Japan. We are all from Island Nations, although I know you are now living in NYC and my wife and I live in Fayetteville, Arkansas. I miss island life. I also lived and worked 10 years in Japan.

Awesome! Nice to meet you! We usually use pink beans but you can certainly use pinto. We do make our sofrito from scratch and we have a couple of recipes here for that as well.

Hello. I noticed you used a liquid measuring cup to hold your measured rice. Did you measure the rice using the liquid measuring cup or did you simply use this cup to hold the rice after it was measured using a dry measuring source? 4 1/2 liquid cups is a lot different than 4 1/2 dry cups. Thanks.

Tiffany, you can half this recipe but will take the same amount of time to cook so keep that in mind.

Hi there! We use medium grain rice, the brand depends on what we can find at the store - sometimes Goya, sometimes the store brand, Carolina, Iberia. We are not picky as to one brand.

This is not the same as red (kidney) beans and rice, right? what beans did you use in this recipe (pinto)? I remember the red beans having a thicker, flavorful sauce and poured over the yellow rice but its been decades since i've had my PR Food. Thanks for the video

We used "small red beans" for this recipe. I'm not sure if there is a different (more technical) name for them, but that's what they are called on the can 😝 And yes, typically people might also make additional beans on the side to put on top. What is usually your ratio between water and rice. I see, you had 4 1/2 cups rice and 5 cups water. Is it always 1/2 cup more of water? I usually try to cook no more than 3 cups with 1 can of beans but always fail making it turns amogollao. 😩

Hi Yahaira! I hear you about making rice being tricky! It's always a little bit of a mystery why some things work and some things don't. If you want to make three cups of rice with one can of beans, I'd try 3 cups of rice and 3 and 1/3 cup of water. If you are still worried that your rice will get amogollao, you can reduce the amount of water just a little bit. Then, if the rice is still a little undercooked at the end, just add a little water and keep cooking on low.

My husband liked the arroz guisado con habichuelas. I made a mistake and added fresh beans instead of can beans. The rice was not fluffy because I had to make sure the beans were cooked. The beans were too firm, eventhough, I soaked them overnight. Do you have a recipe for fresh beans and rice? Otherwise, it had a wonderful flavor.

Hey! Just cook the beans separately before hand and then just add them to the rice. You can’t cook them together.

Very good cooking. But, don’t speak over the open caldero to avoid saliva droplets from making contact with the rice or simply place the lid and talk over it if you like.
