I intuitively did the same thing as a young learning guitar player: first figure out the bass line (roots of the chords), then figure out the chord quality (major or minor) and then lastly figure out Maj 7th or Dom 7th. I did that on countless Beatles songs and just tunes off the radio back in the day. It was great ear training.

First heard Dave on a Grant Green tribute record with other heavyweights like Ed Cherry, Bernstein, Whitefield, and Malone. Great player and this is great advice.

I have just heard this guy on the radio on ABC Jazz (Australia) playing 'We've only just begun'. Slow tune, anyone can figure it out. But from the very first few notes, the sound, the masterful touch ... I thought : 'this guy is great'. So I'll check him out from now on.

I reckon playing along to records and trying to just grab a phrase 'parrot fashion' and copy it in realtime is great too. That's how I learned the broad brush stokes and timing, but I've studied lots of detail with transcribing too. Grant Green is great, and such an underrated player.

Can I do his course if I only own an acoustic

Of course. This lesson is about ideas rather than the type of instrument being used, although you will in time discover which type of guitar is most suitable for your playing style: acoustic/electric; hollow body/semi-hellow/solid.
