I'm the same, never understood the appeal of this dish even after trying it once in Korea but your video made me want to give it another chance, especially as I'm looking for more high protein, plant-based low carb recipes. Made it exactly to your instructions and I absolutely loved it. My taste buds have also changed with age and I appreciate subtle, nutty, nuanced flavours more now than ever. Beautiful, simple, lovely. You told me, once, a couple of years ago that I would love kimchi if I ever tried it, and you were absolutely right! My favorite is a stir-fried, vegan recipe that comes in a can from Korea. It's expensive but so worth it! Now I'm craving kimchi ramen. 🤤🤔

mmmm i looove kongguksu! its hot inside the house and i'm eating it while i watch this video lol. will try it sometime soon making the soy milk from scratch! i do the shortcut version using soy milk, tofu, tahini, and sesame seeds. if i don't have somen noodles, I'll use buckwheat or cereal noodles. highly recommend the buckwheat for a more nutty flavor 🥰 i love it super bland but sometimes i like to add a bit of bouillon with a splash of Yondu. and cucumber and tomato to make it refreshing!

김치 때깔을 보니 이건 맛없을 수 없는 조합이네요 🫢 제가 자주 갔던 식당은 약간 견과류 맛도 나던데 콩물을 갖고 면포에 한번 더 짜서 엄청 부드러웠어요. 내일은 콩국수 먹어야할듯

You can put sugar instead of salt to season the noodle(with a tiny bit of salt). That's how Jeolla-do enjoys 콩국수! :))

Oh I’ve heard of this before I believe in English. They call it Korean bean noodle made with soybean based soup but I heard it’s supposed to be very good. I might try it someday.

This looks absolutely PERFECT!! One question, how can you tell what’s a “high-quality” soy bean? Are there any particular brands you recommend? I’ve made soy milk with lower-quality beans and I didn’t enjoy it, but I don’t know what to look for. Thank you!

To me, good quality beans are: Freshly harvested beans cultivated within a year, preferably organic & non-GMO

Got my beans soaked overnight and I forgot to ask! Do you need to be sure all skins are removed? Because I must have rubbed and rinsed 30 times until I could get any more skins out! Lol!

I have a kimchi jjigae video, you just need to follow the directions of my original kimchi jjigae with pork recipe and just substitute the broth with the soybean milk. But it only works with this freshly made soybean mill (konggukmul), not the store-bought one

I tried this dish while I was in Korea, and I did not like it. It gets surfeiting really quick and the more you eat, the greater you'll feel nauseous. It's really an acquired taste, if you like something that tastes very light but cold?
