Also, if you want black icing you should start with chocolate icing or ganache. It's already dark so you won't need a lot of black dye.

@@AsiaCoffee haha of course! So basically, once you have put some colouring in your frosting you’ll want to stop. Like mentioned in the video, too much colouring can ruin your frosting by making it taste awful (done that haha) so instead, simply take out a little bit of frosting and place that into a small microwaveable bowl (depending how much frosting you have I usually do about 3-4 tbsps for around 3-4 cups) place that bowl into the microwave for no more than **15 seconds** When you take the bowl out you’ll notice your frosting is melted and darker. Give it a good stir and you’ll probably notice it became even more darker. You can simply place that entire mixture back into your frosting and mix that well enough (it doesn’t melt my frosting) or you can wait for it to cool a little bit If your afraid of it melting but do note; heat makes frosting colour darker. Cover your frosting bowl with a towel or cling wrap. I like to cover for atleast a day. It really blooms up and makes your frosting a beautiful rich colour. Hope this helps!

Hi! You can also use a double pipingbag system by placing one piping bag into the other. Fill in one of the bags with the buttercream and cut the end without placing any kind of piping tip. Slide the piping tip into the other bag and make a clean cut at he end of the bag till the piping tip shows. Place the piping bag with the buttercream into the one with the piping tip and every time you want to change the tip, just remove the outer bag and slide a new piping tip.

I do this often but sometimes I gotta put the frosting directly in. But when I do this, instead of using 2 piping bags, I put the frosting in plastic wrap, their the ends so it's a tube shape then snip off one end before placing on bag. I know many bakers do this, but some may not know. It's less cleanup and you can also add multiple tubes of color into one piping bag so you can try different color combos, without having to ruin frosting of you don't like the combo.

I tried whipped icing in my hot apartment. Did not go well. I hate American buttercream so I don’t know what other frosting to try. One thing I have noticed is none of the icings I make acquire a good texture. Sure, it will Be nice for about 5 minutes and then get runny. Not sure if it’s due to my hot apartment with no AC but it makes me feel like a failure. Great video. You earned a sub (: For reference, my buttercream icings such as ermine and American buttercream, will look like second 0:34 but a couple minutes later, the icing will look runny like 1:48 but a tad bit worse. It doesn’t look as runny and her runny example.

Yes, you’ll want your icing to feel/look whippy but still keep its shape! There’s no rule about the depth of icing you must have on the side of your cake; as long as you try to keep it consistent all the way around. When I do cakes for family events I and it calls for fondant I typically use a ganache or buttercream because it does hold up way better but I have a birthday for a niece that can only have whipped icing because of allergies, but the cake decorations call for a small fondant accent. That one is a bit tricky, as cream cheese frosting is very, very soft.... Your recipe most likely calls for butter and powdered sugar. I would increase the powdered sugar to make the icing slightly thicker then refrigerate the iced cake. The butter within will help the icing/frosting to harden enough to cover the cake in fondant. I would recommend that you work fast when covering and store the cake in a cool (not cold) refrigerator to keep the cake intact. I highly recommend using a buttercream recipe with cream cheese flavoring instead. Best of luck!

There's a trick that I've tried recently to color my white icing black without over coloring and getting that bitter aftertaste. I find that it works very well when you're using gel food coloring (not oil-based color). The trick it to color the icing to about half the shade of your desired color, separate about a third of the icing into a microwavable bowl and microwave the icing for about 5-6 seconds. The heat darkens the icing considerably! You'll want to wait about a minute for it to cool enough before adding it to the remainder of your icing. To really set the deep color, allow the colored icing to sit for a few hours. Thanks for watching!

How do you stop sprinkles from dissolving on buttercream?If assembling the night should I add sprinkles before customer pickup to ensure the sprinkles don't melt bleed dissolve?

Yes definitely wait to add sprinkles if you’re concerned about the colors bleeding! ALSO, I would recommend that you ice the cupcakes and immediately add the sprinkles right before customer pickup. Once the icing is set, it’s difficult for the sprinkles to stick to the icing. Best of luck!

I prefer buttercream! Whipped cream is too soft and isn’t as versatile as buttercream, so I don’t like to work with it. Buttercream is popular in the US, but grocery store bakeries like to use a lot of whipped icing on simple cakes. I think this is causing more people to request whipped icing here, but most people don’t realize that do so greatly limits a cake design. Thanks for the watching!

Good question! I've never used metal Russian tips/nozzles before, so I don't know for sure. If I were to try it, I would start with a crusting style (American) buttercream because it's easier to adjust the consistency. Yes you can! You may have to add cream of tartar to it to stabilize it though. It’s really soft, so don’t expect to put fondant decorations on it. A “crusting” buttercream that is very thick works best for flowers!

Maybe practicing with instant mashed potatoes (they’re really smooth), but I wouldn’t even do that. Having the right icing thickness/consistency is very important. I don’t think you would be able to adjust the consistency of mashed potatoes as easily as icing you buy or make yourself. My thoughts: Save your mashed potatoes for dinner! 😁
