I tried this today in a pressure cooker. Shorter time. Waaaahhhh very fragrant and delicious. I used 5 spice powder and rock sugar instead. Goes well with steamed buns, noodles, rice, squash and cabbage roll.

Growing up in the ‘70s, pork belly was the cheap cut of meat that nobody wanted to eat - so that’s what our family ate! 😂😂😂 Fast forward to today, pork belly is a bistro/gastro food establishment favourite, and the price is far too high for weekday meals… 😢 Lovely recipe - I’ll definitely be giving that a try!

Same thing for chicken wings! They were the throw away part of the chicken so they were always so cheap. Then came wing mania and now I’ve seen them for $10/lb or more! 😢

I either get it as part of a purchase when I buy from a butcher I know, we buy half a pig at a time, or I wait for a sale. This is Newfoundland. Meat pricing can be weird. I have heard people argue it's the cut that determines the price. Not so here. Here it goes like this: Lamb - overpriced , you pay for every inch of road traveled or wave that strikes the boat shipping it in. Beef - expensive, have to wait for a sale or find a good butcher Chicken - affordable tasteless meat that is a blank canvas for whatever you want to do with it Pork - can be expensive or cheap as chips depending on the week, find a good butcher or a sale.

I know this post is older, but if anyone is reading this and wondering the same thing, and didn't find the other reply to be particularly helpful, I just follow his same steps but with rock sugar. It's caramelized when it reaches a lovely golden color, and your pork is evenly coated with it.
