#參考溫度200C 烘烤10分鐘後,降溫至180C繼續烘烤15~20 分鐘(全程都是放中層烘烤)
#做蛋黃酥用到的鹹蛋黃可以噴上一點米酒,再放入預熱好的烤箱 150~160C考大約15分後取出放涼後,密封冷凍至少一小時後再來包餡
#如果買得到豬油,建議都用豬油來操作水油皮跟油酥口感風味絕對是最好的!
食材ingredients:

Dough 水油皮:12 portion
• 130g cake flour 低筋粉
• 80g bread flour 高筋粉
• 60g pork lard or butter豬油或無水奶油(酥油)
• 20g sugar powder or caster sugar 純糖粉或細白糖(如果是做白酥皮月餅可以不加糖,烘烤出來就會比較白)
• 95~100g cold water 冰水
• ¼ tsp salt 鹽
Shortening dough 油酥:12 Portions
• 260g cake flour低筋粉
• 130g pork lard or shortening 全豬油或無水奶油(酥油)也可以各半混用
#以上配方包酥在對分麵團可以做出24顆的月餅皮(依照自己要做的大小月餅去調整尺寸重量即可)建議比例水油皮:油酥=1:1
mung bean filling鹹蛋黃綠豆餡: 12 portions
• mung bean去皮綠豆仁100g
• caster sugar白糖100g
• butter or lard黃油或豬油 40g
• egg yolks鹹蛋黃 110g
• oil 沙拉油 2~3TBSP (炒餡用)
