Every Sunday morning my Dad would bring my Mum her breakfast-in-bed, and usually it was half a grapefruit and an omelette with fried mushrooms. But when the asparagus was in season, she would have this with poached eggs instead... Thank you for bringing that memory back to me - I shall certainly be trying your version. :)

Nice looks great! This is exactly how we used to prep asparagus at the restaurant I worked at. Good tip for peeling if you put the asparagus on something raised like an upside down bowl the surface doesn’t get in the way and its much easier to peel.

@@thespanishchef probably the US. Here, .5 kilos of asparagus is ~5€. Manchego is typically 14,5€ for half a kilo. One avocado is usually 1,25€ each. And FYI… not pricing for organic…. Those prices are even higher.
