Merry Christmas to you as well. Canada would be an amazing place to spend Christmas, such good eating weather. Here in Australia where I live, it's usually at least around 35 C (95F) and humid :)

@@leescooking Yes, we know and are jealous!! 🤣Most of us are hoping for another green Christmas; it’s happened before, it can happen again, right? I really do intend to make your cake, it’s so tedious making dark cakes and with so many on one diet or another, few of us enjoy it anymore. I still make a gum drop cake for our Grandson, 16, and it’s simply a tradition now. Haha….take good care, enjoy the wonderful madness of Christmas!

I'm actually jealous of your weather for Christmas, such good eating weather, here where I live, we usually have lots of cold dishes. The plum puddings just don't taste as good in the hot weather. When you make this if you don't have enough syrup just add the juice from another orange. I made it today at work and there wasn't quite enough syrup, so I boiled up some more.

Hi from Melbourne, my only criticism is Why didn't you use Australian Crushed Pineapple - Golden Circle. I can't abide buying foreign produce and products when there is a perfectly good Aussie one to support and keep jobs and money in our economy. Now I've had my gripe, the recipe looks like a delicious take on the good old-fashioned boiled fruit cake and I'm going to give it a crack! Thank you for sharing 😊🇦🇺

That's wonderful, and hasn't it been hot? Pineapple is a lovely addition, it adds moisture. I'm posting a Christmas Pud in a few weeks, but an ice-cream one that I make every year, perfect for the hot weather, and so delicious.

This recipe was on the back of the golden circle crushed pineapple tin from the 70’s. It’s a great cake. I had it for my wedding cake! Thanks for sharing!

What is mixed spice? This could be anything- as in pumpkin pie or apple pie spice in the U.S. Thanks!

It really doesn't matter; you could use either the pumpkin pie or apple pie spice or substitute with allspice or more cinnamon. Yesterday I made one at work and I added 1 teaspoon of ground ginger along with the other spices. The ingredients in mixed spice typically are cinnamon, allspice and nutmeg.

Lee, I absolutely loved this fruit cake! I had it Gluten Free, using half buckwheat flour and half gluten free self-raising flour. I also used Rapadura sugar instead of refined sugar. It was honestly the best fruit cake I have EVER had!!! There was a good splash of Sherry too, YUM!! Also, highly recommend frying a slice in butter, mmmmm!

I admit I don't like fruit cake at all. The candied colored dyed cherries are awful. But this looks good. I'm thinking dried cranberries.

yeah, that would be delicious. I made another one a couple of days ago, and I bought the good fruit mix from our local health food store, the difference was amazing, big brazil nuts, cranberries, almonds etc. it was so good.
