Fun fact: Vienna is the only city in the world, which has its own official cuisine. Not just a few selective dishes like New York Cheesecake. In fact Austrian cuisine originated from Viennese cuisine and is was later supplemented with local dishes from around the country, while everywhere else in the world the cities adopted their cuisine from the country they were in.

Your are right in one point, Wiener Saftgulasch is quite like Hungarian Pörkölt. And of course the whole "Gulasch thing" started in Hungary with Gulyas (a Soup, originally made in a "bogracs"), Pörkölt, Tokany and Paprikas. And the mass production of grounded paprika which was sold all over Europe. Btw. as far as I know Hungarians nowadays mostly use Erös Pista (a paste) instead of grounded paprika for Gulyas, Pörkölt & Co, which constitutes another difference.

What's the difference between wienerschnitzel and milanesa specifically?
@samuelandaudrey7 жыл бұрын
Great question. Apparently not much as the milanesa is influenced from the wienerschnitzel but from research and experience apparently in Austria it is generally fried in butter, and in Italy/Argentina in olive oil. Also, the Milanesa includes all kinds of different meat whereas a true wienerschnitzel would be veal.
@suit13376 жыл бұрын
Both - if it is the real deal - are Veal. And are crusted with flour, egg and bread crumbs. Wiener Schnitzel has more breadcrumbs in the crust, flour is obly used for attaching the crust to the meat and is fryed in clarified butter Piccata Milanese has a higher egg and flour content in the crust, also parmigiano is added - the crust is a bit softer therefore - and it is fryed in oil As sidedish: wiener schnitzel goes with potatoes and preiselbeeren (similar to cranberry, but sweeter) - piccata milanese goes with spaghetti and tomato sauce.

Nothing wrong with pork schnitzel, all the austrians will rant about how pork is not real Wiener schnitzel but in reality the all order pork themselves because of the price and its just as good ;) by the way its not necessarily a super thin cut, its just bashed thin with a meat hammer to make it tender. Cut is usually from the shoulder.

Well, first of all the "Apple-Strudel" is quite much older in Austria than the ability to make Vanilla-sauce! A question of being able to count years! And second, with keeping in mind what I said before, I spoke of the "Traditional Viennese Style" with a big emphases on "traditional"(=old) and an emphases on "Viennese"(=not Burgenland), as well. Have you ever heard the expression "Wiener Küche" which literally means "Viennese cuisine"? And third, it is true, the Germans did the "Vanilla-thing" in combination with an apple-strudel, in the first place. Sorry, if I destroyed your view of "some things"

Yeah, actually, that's not true. MOST restaurants here are family owned, and saving is top on the list. The foods used are generally cheap and EVERYTHING is used, not top quality by any means. It's just like back home in the kitchen, and I've cooked in family owned Austrian restaurants, so called "Mexican" restaurants in Austria, even huge resort restaurants like Robinson Club (Ampflwang to be exact) and it's the saaaaaaaaame thang! I was REALLY surprised! I don'T go out at all because I know what ur eating, and tho it's not bad, it's not what u think ur paying for so, that's the truth man.
@beyondquestion6 жыл бұрын
U'd be amazed to see how many of these kitchens have box soup from brands like Knorr, Unilever, and even ready made Roix (spelling, it's pronounced ruuu..) Ur soups are made from scraps of vegies along with onions and such, soups are usually left overs converted (palaschinken, leberknodel, fleischstrüdel, etc) and most salads are revived with water and ice cubes, tho ice cubes are hard to come by in Austria lol! Trust me, ur not being poisoned, but I feel ur being taken advantage of. Most of these foods are from Hungary anyway, and lots are focused on poor families anyway and havce become popularized in kitchens. U'd be real surprised if u can get access in the kitchen and u know ur shit in culinary operations. (how to tell fresh from not, old vs new, etc.) One main rule is first in first out, old b4 new, meaning food products... Bon appettite!^^

I told someone about making the gulasch and I mentioned a season I forgot the name of. I don'T know it in english, but here it's called Wacholderbeeren. OMG!! There Juniper berries?! I thought those things were poisinous!!^^ I grew up around Juniper trees my whole life, and never realized I was cooking with those berries here in Europe, the whole time til now!^^

Honestly, it tripped me out!^^ I guess it comes down to culture, cuz back home, u can't buy boiled eggs off store shelf, and I never seen raw eggs sold without being in a refridgerator of some sort. Here, all good. Boiled eggs are sold just like normal uncooked ones, AND, even Eatser eggs are cooked coloured, and sold like raw eggs. At the Hofa, they tend to be sold without fridgeration, usually stacked next to the sugar. In my whole time here, not one case of anyone sick from them, and many use raw (unpasturized) whole eggs in Tiramisu, not to mention them uncooked "breakfast" eggs they eat with a spoon, YUUUUUCK!^^

@Bernd DasBrot guess the allergies have sumn to do with the missing nutrients... :)
@beyondquestion4 жыл бұрын
@Bernd DasBrot Well to be fair, pasturization usually is around 75 C° or so, for like, a couple minutes, enough to kill the targeted bakterias. I heard sumn about that, how the eggs back home are processed and lose this protective barrier. So I agree with u there, but also, overcooking period is something to avoid.^^ \O>

Funny, the "Schweizerhaus" in Prater is famous for having original Budweiser beer in barrels which is tapped and very rare in the whole world outside the czech republic and tastes totally different in comparison to original Budweiser filled in bottles. And you drank Paulaner which is a german beer by the way and which you can get everywhere at any time. A missed opportunity. But Gulasch and Beer is in fact a good choice, and Wiener Schnitzel, as well, allthough the speciality of the "Schweizerhaus" and the reason why locals visit especially this restaurant is, beside of the tapped Budweiser, the roasted Pork-leg.

1:04 For Wiener Schnitzel try Figlmüller (u might need reservations) and Schnitzelwirt. 1:27 The Schweizerhaus has like 30 brands of beer on their menu - if u don tell them which one u like they will give u probably the cheapest. They have Austrian brands. 1:55 Gulasch is a Hungarian dish! You can get very decent one in Vienna (they are neighoburs and we have a long history with them) in the right places. Many times (including this one) they will be non-traditional and serve some Vienniese versions like Fiakergulasch (with sausage and eggs), Herrngulasch - this one - (with Knödel and Essiggurken) or Serbian (with beans). 2:14 Fork in left hand, knife in right hand. Ur holding both wrong. U hold the knife with fore finger + thumb and the fork (while cutting) aswell. For rising the fork up from plate into the mouth u turn it around so that the fork lies on ur forefinger and u hold it with the thumb. btw a lil game my parents used to play with me to teach me how to sit at the table: they would put small bills under my armpits - if they were still there at the end of the meal I could keep them. Now look at YOUR arms while eating. 4:41 Milanesa means "Woman from Milan" in Italian, has nothing to do with any dish. 6:46 It looks like a normal potato salad with Vienniese dressing: oil, vinegar, lemon, salt, sugar, pepper. 6:50 Generally for desserts I would have chosen a coffee house or patisserie. Traditional Vienniese dishes u have missed: 4ex Tafelspitz, Wiener Suppeneintopf, Kutteln, Leberkäse, one of the many kinds of soup, some local white wine,.....and this is just if count Vienna - for all of Austria the list would be A LOT longer. Rest already said in the other post.

Gulasch is also a Viennese dish. Its a bit a different dish, its is derived from the hungarian dish of course. It is actually similar to Pörkölt rather than hungarian Gulash.

1.First of all, as you said there is a meal called Goulash ( exactly as the same as the traditional food from Hungary (pörkölt). The Austrians couldn't pronounce pörkölt so they call it Goulash. 2. Kartoffel salad/Erdäpfel salad (it is from Bavaria as the Paulaner Wheatbeer) 3. The Strudel is "echte" hungarian sweet. It is from the 18-19.th century, when Hungary and Austria was a Monarchy. The original name is "rétes". In the beginning of the 19th century it was on the Ritz Hotel's Menü in Paris as "Rétes Hongrois”. However, you should try these food. All of them are delicious even in Austria!

When we were in europe we were in italy and we went to a town on the german italy border in italy called bulzano and the food was to die for italian mixed with german and there is a small village up the mountain as you take the cable car there are shops a grocery store some restraunt a few houses a ski resort and you can see a amazing view of the olive farms as you go up the cable car you should visit if you are in italy.
@michaelgrabner89777 жыл бұрын
Sorry to say that, but Italy and Germany share no borders, at all! But I think you ment "Bolzano" which is originally called "Bozen" in the german language and that is Southern Tyrol which is the most northern part of todays Italy. After World-War One Tyrol which was always a part of the Austrian Empire was divided allthough the Italians couldn´t conquer it during the war (they tried hard but didn´t succeed) and the southern part of Tyrol fell to Italy according to the peace-treaty of St.Germaine in France in 1919.
@lordnat19684 жыл бұрын
In southern Tyrol they don’t have german food, this is Austrian/Tyrolian food. A german cuisine is not existing... As a tourist you should know were you are traveling!
@katharinasei.18076 жыл бұрын
Nice video, seemed like you enjoyed your food. Maybe you should have tried the "Stelze"(knuckle of pork) - it is a meal the Schweizerhaus is famous for. Furthermore I need to say that you can only call it a "Wiener Schnitzel" if the meat is from veal. Since veal is pricy they often make Schnitzel from pork. This version is tasty too but no real "Wiener Schnitzel". (It is like you are saying you want to have a roasted turkey and you get a roasted chicken.)

@ samuel: omg you hold the knife in the left hand? thats also kind of barbaric. ^^ @ audrey: you are absolutely right a gulasch in austria would be a pörkölt. And i think pörkölt is impossible to pronounce for english native speakers. @ both: at the schweizerhaus you MUST eat Stelze and drink Budweiser if you did not try that yet. Thats what this place is famous for. the Budweiser is not pressurised with CO2 but with N2 that really makes it special. paulaner is a deathsin. Grüße aus Wien
