Authentic Italian potato pizza is one of the most surprisingly delicious pizzas. This pizza has such fabulous flavor. When you try it, you will most likely be shocked at how good it tastes.
Ingredients for the dough:
500 gr all-purpose flour
325 gr water at room temperature.
1 gr fresh yeast or 1/4 tsp active dry yeast
15 gr of Salt
1 tbsp good quality Extra Virgen Olive Oil.
The dough can be ready between 6 and 8 hours at room temperature, but even better if the second fermentation is done in the refrigerator. It can be kept between 24 and 48 hours and up to 72 hours. Improves the flavor and texture of the dough.
For the Toppings:
Option # 1: 2 small potatoes cleaned and with the skin, fresh rosemary, coarse sea salt, freshly ground black pepper and extra virgin olive oil.
Option # 2: 2 small boiled and peeled potatoes, 1 italian sausage crumbled, provolone or fontina cheese, fresh rosemary, coarse sea salt, ground black pepper and extra virgin olive oil.
