Miss Raquel I just cooked some of this rice and peas and trust me it's out of thos world good. That first mixture with coconut milk and all the seasoning I tasted it like 15 times I almost drink it off lol. The rice and peas was so good thank you so much

You don't sound like a Jamaican but you're definitely Caribbean. I must say this is THE BEST rice n peas recipe on the internet! This is the way our ancestors did it! Very, very beautiful well done. The finished product looks AMAZING and I can only IMAGINE how that taste OMG!!!

Thank you soooo much.My tia's would make this when they came to visit and I was a child.They were from Panama my mom was from Costa Rica.I just remember a hammer and that coconut was opened.They are all in Heaven laughing that I'm craving their peas and rice.Can I use Jasmine rice?

Actually Jade, the coconut milk is what is use to cook the beans, so it’s added about 5 minutes after adding the chopped garlic. If though, the Coconut Milk in the can or powder then it’s added when the beans are fully cooked.

Hi Patsie, some people do add a bit of sugar, not to make it sweet, but just to balance out the flavors. As I mention, the sugar is optional.
