@@ramonserna8089 my nonna died a long time ago (not all people who leave comments on KZbin are 12 years old) and she was definitely around long before WWII. That story is documented because it is based on facts that did happen - people _did_ use US military ration packs to make a version of carbonara because the country was in quite a state at that time, unsurprisingly. It doesn't however mean that there was no precedent to that dish which was a common preparation made by home cooks. Just because nobody published the recipe in a book before that time doesn't mean it didn't exist.

Last month I was in Venice for a week and had the best pasta dishes I've ever eaten. I dare say they were better than the ones in Rome. Of course the dishes themselves were different so perhaps it's my love for seafood made me love Venetian dishes more. Don't mess around with Italian pasta dishes. They've perfected them and don't need anybody, even the "great" Gordon Ramsay altering their pride and joy.

I believe Gordon once said it was a mistake to copy the Jamie in 15 minutes concept. It's funny though how all these British chefs go about changing a dish that will actually cook in just 10 (pretty much dictated by the pasta cooking time) into a single course meal. Considering the target audience I can also understand the choice of streaky bacon since that can be found in every UK supermarket. He's missing the essence though and I'm not even talking about the added veggies here but the bacon is way too lean so IMO he should have added lard (which is also in the supermarkets and would have allowed to do the mushrooms first) and he could have used a hard sheep's cheese from a British farm to make it a true Cornish version instead of grasping at Grana Pardano to give it something Italian.

9:16 If you want to pick up the flavor from the pork fat in the mushrooms, you cook the guanciale (or bacon, if you must), take it off the heat, then put the mushrooms in the rendered fat. Then you cook them until all the water comes out, and you do that _before_ you even put the pasta on because it takes awhile. Or, even better, saute the mushrooms as your first step in rendered pork fat you've saved from before. In my house we have a cruet specifically for saving excess rendered bacon fat.

Vincenzo, I really need to thank you, you thought me so much about my favourite cuisine. Yes, I prefer Italian food over portuguese. My friends are always asking me to make italian food because they love it, and I try to be as faithful as possible, but here's the problem, I don't really eat meat, so, sometimes I cook them for instance an amazing lasagna, I definitely try it because I don't want to give them crap, but I end up eating like a can of tuna with chickpeas or something lol. My spouse was just looking up the history of carbonara because of this video and learned that it came out of WW2 Rome after the Allies took it. It was a food of necessity born out of what the Roman people had to hand and what the Americans had brought with them (bacon, powdered egg yolks) and patterned after older dishes like pasta alla gricia, and then refined in the postwar era. The first mention was in an Italian movie from 1951, but the first recipe for it was in an American cookbook from 1952!

That's the reason, after 20 years of living in Italy, and after that looking at Gordon Ramsay recipies, i said : Is Gordon Ramsay a chef, or am i looking a paperissima show 😅. Hey Vincenzo 😁 So, I have an opinion that you may not like but pls hear me out. Recently: I tried afeltra pasta. Yes it was good: yes it absorb more sauce, has nicer flavour, felt less stomach problems etc However: it was around $8 Canadian. Whereas brands like de cecco and la molisana, and surprisingly barilla are around the $2.50 to $3 Canadian And personally: I noticed more of a huge difference between barilla compared to de cecco and la molisana rather than those 2 compared to afeltra Therefore: I don’t think it’s worth the extra price for not a huge difference. Again yes: afeltra was the best overall, but it wasn’t worth the extra cost when you can find something still very good for much cheaper. Will i try afeltra again? Sure, but only on special occasions. But as part of my weekly pasta consumption? I think de cecco or la molisana have been my top choices 😊 And barilla? Never again 🤢😅

It’s a fun challenge channel that challenges him to make dishes inside 10 minutes and he has fun with it. 😂 He said at the start it’s an “interpretation” and the channel started during COVID lockdown when you couldn’t get a lot of ingredients so you had to cook with whatever you had 👏 It’s not how he would cook it in a restaurant 🤷♀️

We have a Italian restaurant near by, with Italians, not Kurdish or Turkish people. They make authentic food and it is the stuff heaven is made of..❤ The authentic carbonara is absolutely heaven, and there is NO cream, no peas or parsley in it 😂

I love garlic, but it's not meant to be that strong in a carbonara, it's just meant to be a small note in the flavour of the dish. Like 1 medium clove at most if you don't have guanciale.

There are many fine Italian restaurants here in Montreal. But as soon as I see in their menu : Carbonara with cream... I never go to this supposed Italian restaurant. Cream in Carbonara is the american way... the wrong way!

I also use cream for my sauce. However, I don't call it carbonara, I call it pancetta pecorino cream sauce. Greetings from Germany😊

Tanti anni fa, ero fidanzatissima con uno chef australiano...Finché, una sera, lui disse: "Faccio una cosa tipicamente italiana, così ti senti a casa (mi si sciolse il cuore, ma non avevo visto il suo pugnale pronto a colpire...): una carbonara"... Vidi apparire: cipollotti, funghi champignon, aglio, panna (il resto non mi ricordo). Quindi dissi: "Ah, ma hai cambiato idea, un'altra ricetta!" e lui mi lanciò uno sguardo con mille punti di domanda. Alla fine la feci io, e si, il bacon non è il guanciale, ma piuttosto che niente (poi gli anglosassoni neh anno dei buoni), uova, il parmeggiano c'era, grazie a dio, e si salvò la serata. Ho poi annullato il matrimonio per paura :-) (no, però, vabbè). Cmq quel video di Gordon, non sarà la carbonara nostra, ma i commenti sotto quel video ti mettono allegria.

When black pepper is raw garnished, it tastes bad to me. When it is cooked in the dish, however, I love it.
