Born and grew up in Mexico! I have to said that anytime I go on vacations in my own country I get to experience how amazing and diverse is my country. Gonzalo is a champion, what he does is epic and we need more people like him. When he explained his reasons why, his message stuck with me, had to listed few more times, so simple yet so powerful. Speaking of your own farm back in Wales I would suggest looking into Charles Dowding do-dig gardening. What he manages to grow in his backyard with little effort is mind blowing.

Gaz, your warmth and personable demeanour puts people at ease, along with your complimentary remarks and gratitude (this holds true for Tom, as well, I’m sure). But, what lovely families you met and learned from. The organic farmer is doing incredible things for his family and community. How nice that you followed your awesome dinner with a visit to the family which made the wonderful pottery used at the hotel’s restaurant. I do hope they made their trip back to Wales intact. This episode made me cry. I'm a first generation American, my parents are from Mexico & what Gonzalo said, about food being medicine & there not being a Healthcare system in Mexico just hit home... I am growing my own foods in my small balcony in my studio & for that I have to thank my parents & my grandma for always teaching me to grow food from seeds. I currently live in Yucatan, Mexico. There is another accidentally vegan mayan dish that uses ibes. Its called Toksel. The ibes are boiled and strained then burning hot rocks are added to smoke them and crisp them up. Then they are mixed with pepita de calabaza and served in handmade tortillas. Edit: The burning hot rocks make a world of difference. If you are still around there, we can show you.

@@gazoakleychef I think KZbin would benefit from human curation and not just rely on the algorithm. I know it opens up a can of worms with favoritism, etc, but having only watch time, click through rate, and engagement as blind metrics disregards the human essence that is unquantifiable. The reason people still go out of their way to pay for other streaming services to access quality productions should inform KZbin about thinking deeper about this. I’m sure they have their reasons backed by data, etc…, but I just feel like sensationalism and senseless trends gain way more traction than they deserve. I thought about a reward system that would give everyone a few stars a day that they can use as a “super-like.” If they don’t give it out easily they get a reward, like no ads for a week, or a free movie, that way it “costs” people something to rate a KZbin channel they like and doesn’t fall into the like trap where everyone gets likes and it becomes meaningless. Anyways, I digress. My hope is that investing in quality, as you are, creates a more lasting impression in viewers, where they mentally “subscribe” to the channel.

Literally this hits me at my core, every aspect of what makes a powerful food documentary … the very fibre of food and nature that binds the culture, people with renewed hopes and dreams. You’re the new “Anthony Bourdain” that humanity need right now (lot younger and not hard in the eyes lol, and wiser and healthier and so much happier” ) FYI I’ve spent most of my life cooking and exploring farms to having my own farm to table establishments then finally to having my land to start my own farm and continuing to learn about permaculture. To see this eco farm doing “syntropic farming” and applying permaculture principles is very inspiring and energizing to my current work and passion. Your work is life changing. This place reminds me and my wife of a garden up here in WA state, the "back to eden" garden, the guy has his own method he shares for free with everyone, giving tours like this guy is doing for Gaz. Its incredible, Gaz should totally check it out if the guy up here is still giving tours - he just uses woodchips, that's it. And his garden grows everything. The most incredible thing was seeing a Lavender plant (grows in dry soil) right next to a wasabi plant (grows in very wet soil). He barely has to water anything in his garden and he gives tours and lets you try all his stuff. Its amazing, like this garden here. Great stuff Gaz, looks delish

I have had the chance to work with Cedros Boutique Hotel and fell in love with the traditional materials and techniques they used to create this beautiful place. I first didn't click on this video and now finally came to watch it because during your garden tour you said it was your best work. And after years of following your channel I know I can trust my boy 😉 . It's so well made and I thank you so much for sharing your experiences and the stories of the people you met. So inspiring. Amazing experience! Gaz- You are blessed to be able to visit such a beautiful culture. I was there in Oct. 2021 (Chelem, Mexico) & was in love with the Yucatan with all its history, culture and people, not to mention it's cenotes.

Oh my word, I loved this. I'm in the states and have been thinking about selling everything, loading up the cars and driving to Mexico. Seeing this beautiful farm, the look on your face with every bite, I think you've just confirmed it. Thanks for showing us the world thru food. I agree growing our own is the only way to save the seeds, so no food gets lost to time or corporate greed. Really look forward the to the next installment.
