For those of you considering the Box I suggest a Thermoworks Square Dot thermometer. It is two probe. One for the meat and one that averages the internal temperature inside the box so you can remove coals if the temperature is getting too hot or add coals if the temperature is getting too low. Not knowing the temperature inside the box is fraught with peril resulting in a lot of wasted time.

Very interesting, wasn't aware of that device. Two questions, Does the smoked flavor come through or is it being insulated in the box? Also, how does it compare to other methods of slow cooking lamb, like the Cretan ofto/antikristo?

There is no smoke from the charcoal that can permeate into the box. You can introduce smokiness either by smoking the lamb prior to putting it in the box or by adding a quality liquid smoke. I like this method better because the heat that radiates downward from the charcoal cooks the lamb as if it were on a rotisserie and the moisture in the chamber keeps the lamb very moist. The method you mentioned above like a rotisserie would, requires that you eat the lamb immediately from my experience, where the lamb in the box will stay crunchy and moist for a while.

Tons of fresh vegetables! You can keep the stock, drain off the fat and make an amazing gravy to add to chicken peas, add some dates, possibly use the broth as a base for couscous…

The legs of the rack were turned inward allowing the meat to cook in its juices. If the rack was flipped over the other way the meat would have been a couple of inches above the drip pan.
