Ayam Penyet means fried chicken that's smashed with sambal, it's different with above recipe which is Ayam Kremes

Traditionally the chicken is boiled in very low heat for about 2-3 hour to make give it more yellow colour

In bahasa penyet means mash. So you have to mash that chicken first then you pour the sambal on top of chicken and you can call it as ayam penyet.

+theMEATMENsg sry man i hate to admit but its not the traditional one,maybe you should spend some time in my hometown and ensure you've tried the authentic ayam penyet before coming up with the recipe your chilli is off topic le ayam penyet chill consist of a special ingredient tomato..please don't tarnish its original taste like many hawkers do its as good as disrespecting our food culture like many hawkers do and same goes for nasi padang..however i would like to compliment you on coming up with your own recipe ;)

Palm sugar, brown sugar. They can be in the form of granules, blocks or powder in Asian supermarkets.

I think the boiling of the chicken was too short. For ayam penyet shouldn't the meat be really soft that it can almost come off the bone. In order for that you need to simmer much longer say for 1 hour?? After frying then smash it once with the flat side of a cleaver. What ever it is the flavour of the chicken according to your recipe is very nice. Thanks

I have to disagree with the sambal.. We(indonesian) use belacan in the sambal (chili, onions and tomato are steamed first) Anyway, the chicken itself is mouth-watering..
