Stalic Khankishiyev and Azerbaijani chefs cook in nature, at a picnic, special kebabs - kupaty and kusabs, khan-kebab and lyulya-kebab, as well as lavash and kutabs. CLICK TO READ DETAILS!
In the summer of 2008, Stalik Khankishiev comes to Azerbaijan, to the city of Ganja, where the chef of one of the restaurants prepares kupaty, kusabs, kebabs and kutabs with lavash for him at a picnic.
To prepare lula kebab, they take fat tail fat and meat, which are chopped with an ax, and onions, chopped with a knife. Everything is kneaded and fried on skewers.
For kusabs (khan-kebab), take all the insides of a lamb: liver, heart, kidneys, lungs and onions, herbs, spices and a little lemon juice. Everything is wrapped in an oil seal (fat net) and cooked on skewers.
For kupats, the same filling is taken, only natural, well-cleaned intestines are used as a shell.
Lavash is cooked in a convex pan - soot. For the dough, take flour, water, salt and yeast.
Kutabs are prepared from the same dough as pita bread, for the filling of which a variety of greens and young brine cheese are used. Ready-made kutabs are greased with ghee.
The horse stands ten paces from the picnic area, but long lenses sometimes give the impression that it is very close.
Sometimes flies fly in the frame, but if you are thinking of having such a picnic, then be sure to choose a place where flies do not happen in summer.
If someone finds something not too hygienic, then, please, cook at home, but do not forget to sterilize the kitchen, or suddenly the microbes will jump!
