Hi Brian, I just followed ur recipe and I did every step exactly same as yours. However, I didn’t get the same consistency and shape cookies like u did. What’s wrong? Mine was going flat and burn at the edge, doesn’t looks like urs round and puffy. I even used the same size ice cream scooper and made sure every dough are 90g.

OK, it is come from two possibility, first is over hit chocolate and using cocoa % lower the 60%。second might be your baking soda put a little more, it both make cookies more flat

Brian Cuisine hi Brian, thanks for ur reply. Am pretty sure I did not overheat the chocolate cuz I took it out from the water bath when it still have 30% unmelted chocolate. But there is one issue when I made this cookies, my chocolate butter mixture doesn’t runny as yours. It looks more like a paste consistency. I made it again today, and it failed again. I feel soooo sad:((( and the chocolate I used was 76% cocoa chocolate.
